Anyone got any good (healthy) wild game recipes to share?

    I'm not much of one for Italian food/flavors, but one of my favorite recipes to make venison parmesan. Basically the same as you would do chicken parm, but I go really really light with the breading/flour (or skip it altogether), top with a small amount of fresh mozzarella, and instead of serving it over pasta, I serve it over freshly grated zucchini and lightly sautéed mushrooms. There are a few recipes out there on the internet for venison parm, but the most important thing to remember--tenderize the steaks very well, otherwise they'll overcook superfast.

    Mmmm I'm making myself super hungry just thinking about it! Can't wait til we've got a freezer full of venison...much tastier than beef.

    I have a lot of receipes, what particular wild game? Elk, Deer, Birds, etc?

    I'd love to hear about everybody's ideas. I primarily hunt deer and ducks, so I'd particularly like to hear those.
