Banana bread isn't that bad for you!
A slightly adapted recipe from my favourite food blog, Orangette.
3 or 4 overly-ripe bananas
2 eggs
1 teaspoon of vanilla
1 teaspoon of baking soda
3 teaspoons of cinnamon
1 cup of sugar (you could use alot less, though).
1 1/2 cup whole wheat flour
Mash the bananas, then beat in the eggs and vanilla until they're well-blended. Add the dry ingredients. Pour into non-stick baking pan (this avoids having to grease said pan). I bake mine at 375 C for between 35-40 minutes, which leaves the middle nice and gooey. It's very low-fat and not terribly calorific, either, so long as you take a small piece and allow your boyfriend and his buddies to inhale the rest of the tray.
Thanks mehughes.. no more butter in my banana breads anymore!

I wonder if I could sub the whole wheat flour for bran. I'm not much at ad-libbing in recipes. I guess there's only one way to find out.......

I bet you could. Might try it the next time I make it. And throw in some nuts, too.
And speaking of banana bread, the unhealthy kind is lurking at Starbucks! Normally I am very careful about what I eat that comes from behind a counter that is not personally assembled by me . . . however I met my boyfriend there for a quick "hello" after work and he noticed that I was famished and freezing. I was heading to work out and he says, "you'd better eat something" and hands me this lovely-looking slice of banana bread.
I figure, hmm, probably 200, 250 calories at most. :noway:
You should have seen my face when I checked the Starbucks website. There were 400 calories in one measly slice! It had even more cals than the kind I really wanted, the big, butterly looking slab with chocolate chips.
Appearances: once again, deceiving. :glasses:0
