I like to throw in a Waldorf Salad for another fresh veggie/fruit combo. I don't like mayo though so I would sub a plain greek yogurt.0

Spinach is a great food too. Very healthy. You could do a spinach salad or if you want to cook it, a spinach pie. I found a healthy version of it here: http://healthy.food.com/recipe/spinach-pie-150928
