    I made this last night with a few variations. I only used 1 cup of rice instead of two to cut calories out and it just seemed like a lot. I also added fresh chopped cilantro, and used my own salt-free taco seasoning. I only used 1/2 of the beans as well becuase I'm just learning to like beans. I didn't add cheese to the top to cut more calories. When it was done, I used a small dollop of fat free sour cream and I crushed up a few baked corn chips to sprinkle on top.

    Overall- delicious!

    Try it with quinoa - even healthier. Also, pro tip: Penzey's apices sells bulk bags of taco seasoning that taste better and save money.
