need new salad topping ideas
Hi, I 'm trying to fix a different "meal" type salad each day with toppings that are low fat, and other than bottled dressings. I usually have turkey low fat chili, a can of tuna, pork and beans, etc... Stuff that will stick to the lettuce without sticking to my hips. Any suggestions?

i like fruit in my salads like cranberries or cherries mandrin oranges apples fetta cheese chicken0

In a tiny bit of olive oil saute peppers, onions, green beans, zucchini, any that you like. Add either alittle balsamic vinegar. Or some cumin, cilantro, chili pepper kind of like fajita. You could even use a fajita packet mix. Chicken is good like this too. I make the filling for fajitas and just eat it on salad.
I also like to grill vegetables with olive oil. I'll make up extra and keep them in the fridge just for salads.0 -
I love salad with black beans, hot sauce and Fage (thick greek yogurt)

Chic peas.....they do tend to be high in calories, but they are good for you and very filling. In fact I generally have just have a serving (1/4 cup) and that's plenty without adding too many calories. I also like the crunchy chinese noodles, not sure of the calories though.0

slivered almonds, dried cranberries and home made maple walnuts, goat cheese , feta or a few gratings of parmesan cheese , bacon bits found in the produce section have little calories and fat0

- grilled veggies (peppers, zug, egg plant) with goat cheese
- mixed bean salad with bits of onion, celery, etc with an oil and vingar dressing
- grilled lean steak with onions and mushrooms

i had a southwestern salad today that was wonderful. it had black beans, corn, and shredded baked chicken that had been marinated in taco powder, pepper, and some other southern spices.0 -

I had a neighbor who used to put apple pieces in her salad (just tiny chunks to throw on there).
I haven't tried this yet but I found it on a vegetarian message board, and it sounds good:
Beans, Chickpeas, Mozzarella, Onions, Tomatoes and lemon juice, olive oil and pepper as a dressing.
It actually goes on pita bread but I bet it'd be good as a salad or used in one...0 -
You could add ground lean beef or turkey with onions and tomatos and then put some taco sauce on top. Like a taco salad.0

I really like to do taco salads. Warmed marinated chicken (your choice of marinade) with low fat mozzerlla cheese, fat free refried beans or salsa, shredded lettuce (like in tacos) and tomatoes. Basically it's a chicken taco without the shell...hope you enjoy! You can also do with ground turkey as a change up.:flowerforyou:0

i try to load up the veggies.....cucumber, tomatoes, celery, carrot, pepper, onion, radish, green peas.....i also like sliced black olives, fancy shredded cheddar cheese, a few croutons, and a few shakes of black pepper.
it definately is a master piece when you're finished!0 -
OK...Don't laugh...I like my salad with hard boiled egg and pickle juice instead of salad dressing. :blushing: Yummy!0

I use a mixture of salsa and light sour cream for my dressing! It's yummy and has way less calories than dressing!0

I was interested in the basalmic (spelling) vinegeret (spelling) but not sure what it taste like. Can anyone tell me what it is similiar too?? I love ranch dressing so I am trying to get away from that , but nothing is even close to that. I love salads with ranch, yummmy!! The light ranch doesn't do it for me. Thanks:flowerforyou:0

I love basalmic dressing. There is one I use from Publix that is only 50 cals per 2 tablespoon serving. I really like it because it has a bite to it and makes the salad "spring" to life! Just make sure you are checking the calories because any vinegrette (sp?) dressing can be loaded even if you think it is a healthier choice!0 -
hard boiled eggs, any kind of beans (kidney, chili, black, garbanzo, etc), taco meat (made with lean beef or turkey), chicken or lean steak fajita strips, tuna salad, chicken salad.... Cottage cheese! Or use fake ground beef (vegetarian crumbles) for a quick taco salad!
You can get light ranch dressing to help lower the calories...and a tip I learned recently is to mix the dressing with some water - it helps thin out the dressing so it pours easier and also less calories!
I sometimes just toss the salad with some olive oil and balsamic or rice vinegar or lemon juice, then pile on the spices - sea salt, black pepper, onion & garlic powders. Or even leave out the olive oil!
ooooh I've had this at a restaurant before, but it can be made healthier - it was like a loaded pizza salad with pepperoni, mozzarella, green peppers, onions, black olives - you could sub. turkey pepperoni and low fat mozzarella cheese!0 -

This is kinda weird, but I discovered it after experimenting in my kitchen last weekend. :blushing:
2 cups baby romaine
1/4 cup brown rice
1/4 cup garbanzo beans
1 tsp. parmesan cheese
1 tsp. worcestshire sauce
Yummmmmm-my! I was really wanting soy sauce and the worcestshire sauce subbed really well with very very very low calories (none in some brands, I think!) and much lower sodium than soy sauce.
I've never sauteed anything in my life, but I think I'm going to try it this coming week for some salads!! Thanks for the ideas, guys. :flowerforyou:0 -

I made a Hawaiian salad a few weeks ago that was delicious and nutritious! (The best kind, right?!)
romaine lettuce (or whatever your favorite kind is)
1/4 red onion (sliced)
1/2 mango (peeled and cubed)
1/2 avocado (diced, sliced, cubed, however you want!)
1/4 cup mandarin oranges (drained)
1/2 cup crushed pineapple (drained -- I used the kind in pineapple juice, not syrup)
1 chicken breast
lime juice dressing (1 tbsp olive oil, juice from half a lime, 1 tsp salt -- I found this dressing to be super salty, so I actually only added 1/4 teaspoon of salt the first time around, and then reduced it even more the next time to just a few dashes of salt)
**This served 2. It wasn't that great the next day (kinda soggy) so I would recommend either making a smaller portion of it, or sharing with someone else!**
This salad was frickin' phenomenal and super easy to make! Hope you enjoy!0 -
Also, another one I really like is...
lettuce (again, whatever kind you like the most)
1 chicken breast
1/4 avocado
1/4 cup dried cherries
1/4 cup dried cranberries
1 tbsp sunflower kernels
1 oz. feta cheese
2 tbsp Annie's Organic Honey Mustard Vinaigrette (this is my favorite dressing! It's only got 60 or 80 calories in each serving and it is absolutely to die for!!)
Mix together and enjoy!0 -
I like to make salads with romaine or spinach and put grapes, slivered almonds, red onions, and a little grated cheese on it with a viniagarette dressing. The sweetness of the grapes keeps me from overloading the salad with a heavy dressing full of calories and fat, but still has lots of flavor.0
