I adore salads, but buying them for lunch based on weight can be pricey, so I've devised a very lightweight salad.
lettuce (iceberg, spring mix, and spinach)
alfalfa sprouts (they have no taste, really)
sliced mushrooms
green pepper, red pepper
onion
thinly sliced cucumbers
shredded cheese
pepperonis
dill pickle chips
sunflower seeds
bacon bits
lo mein noodles
I keep a cup of ranch dressing on the side, dipping my fork into the ranch first, then grabbing a bite of salad with the fork. Keeps the ranch usage to a minimum -- I'm a recovering ranchoholic.
If I was able to add other things to my salad, like if I'm at a really good salad bar, I add YELLOW CORN (omgosh, I love cold yellow corn on a salad) and COLD PEAS (omgosh, love these too!), and a side of cottage cheese (which I put sunflower seeds on). I love crunchy salads!0
