Salmon Dinner Recipies???
Hello everyone,
Wondering if anyone had any yummy salmon dinner recipes to share. My doctor recommended eating wild salmon for dinner 3 times a week(trying to conceive) and I never cooked salmon before. I bought some but was wondering if there was a great way to cook/season it.
PS, I just got back onto MFP. I put on alot of pounds since I got married 6 months ago. I need some help and friends!!!

My fav is jerk salmon:
Marinate in World Harbors Jamaican Jerk marinade (or make your own!) for at 3-4 hours. Remove from marinade and let most of the juice drip off before dry broiling or grilling. There's a lot of molasses/sugar in the marinade that burns off, and if you put in in the pan it makes a charred mess that's hard to scrape off (and is a carcinogen you don't want to eat!).
An important thing about cooking salmon - less is more! I use the 10 minutes per inch of thickness rule, and I do not turn it (skin side down in the pan)
I recently read that the contaminants in farm-raised salmon are a big concern and wild-caught is exactly what you want to buy if you're going to be eating salmon that frequently.

McCormick makes a grilling seasoning called Smokehouse Maple that is amazing on salmon. I uses that whether I'm baking, grilling, or broiling.
I have found that lightly sweet does great with salmon while lemony does well with tuna.0 -
Broil or grill salmon with a little fresh dill, salt & pepper to taste. Maybe a spray of olive oil or butter flavored "Pam". Drizzle with lemon after cooking, if desired. Just don't over-cook. flesh should flake easily when done.0

I put mine in a tin foil packet with some cracked black pepper and drizzle some honey over the top. Close the packet and cook in the oven (or on the grill) until done!0

This is what I have been using and my husband loves it too. I spray the Foreman grill with Olvie oil or Butter Pam and sprinkle the seasoning and let it cook. Simple with couscous, quinoa, or brown rice, a veggie and fruit.0 -
My mom makes the best salmon in the world; all she does is take a little pan, cover the bottom with potatoes and onions, and then she slices up the salmon and lays it over the potatoes in an even layer. She drizzles it all in olive oil, dill, salt, pepper, and then covers the pan and lets it steam until it's cooked through. It becomes really tender and delicious.0

I put mine in a foil packet... mix honey, lemon and butter, drizzle it over the top, then... sprinkle dill and paprika over it... yummmm! if you are feeling really crazy, cut up some lemon and lay it on top to bake. in the over at 350 for about 30-35 min.0

I like my salmon done on my indoor grill (like a Forman) with the thinnest layer of olive oil mayo (keeps the moisture in) and lemon juice. You can use OJ if you want a sweeter fish. It is great served with rice with slivered almonds, red wine vinegrette, dried craisins and some steamed asparagus .... You can also cook extra and make a light salmon spread for sandwiches to change things up a bit. Enjoy and good luck!0

I marinate mine with Mccormick's Asian Seafood Sauce. It's a teriyaki-sesame flavored sauce.0

Last time I was in a hurry so I went with what I had and I sauteed some spinach, mushrooms & tomato and topped my salmon with it and a side of rice... done!0 -
I asked the man in the fish store..Simple but good/
Put the salmon in foil an sprinkle Italian dressing over it. You could also marinate for an hour or so.
Cook at 350..Usually I check it after 25 minutes. No fuss, no muss, and good.0 -
I usually either use McCormick's creole seasoning or use a little lemon juice and dill and bake. Both are delicious! I used to make chicken caesar salad a lot and recently found that adding grilled salmon instead of chicken is good, too.

I'm a salmon purist (probably since I'm from the Pacific Northwest)
My favorite recipe is simple, make a tin foil pouch, put the salmon in, rub the salmon with olive oil, minced garlic, sea salt and cracked black pepper squeeze on some fresh lemon juice (enough to add flavor but not enough to wash the salt and pepper off), top with sprigs of dill and whole slices of lemon and bake in the pouch at ~350 degrees F. Time will vary depending on how big a slab you're cooking. But it comes out perfect every time. This method also works well on the BBQ. If you're inclined to have a sauce I will doctor some mayo for added flavor (lemon juice, a touch of soy sauce, dried dill, black pepper and a little garlic powder).

I sautee whatever veggies I have in a little olive oil, steam one or two salmon fillets and then season the whole thing with lemon pepper. Tonight I'm having two salmon fillets, with 1/4 and onion, 2 red potatoes, 1 zucchini, 1 jalapeno, and 1/2 a green pepper. YUM!0

I cook mine in foil, baste with butter or olive oil, sprinkle w/lemon pepper seasoning(Ms. Dash) slice onions on top. Cook about 15mins or until done as u like and serve over steam rice(brown) with veggies. Another good seasoning is Rosemary Sesoning by Mccormick0

I marinade mine in Dijon mustard and lime juice, its DELICIOUS! Then bake for 12-14 mins at 400 degrees. Get the salmon with the skin on, it keeps it from burning in the pan and keeps the juices in better and is usually cheaper!0

at the moment i love :-
sweet chilli salom - put the fillet in a foil pouch and put sweet chilli sauce on top, sti k in oven until cooked.
on the side i have vegetables and cous cous all mixed together with chilli, garlic and a little olive oil.
its amazing on the taste buds and very filling0 -

This one is a bit high in calories, but it's delicious. We eat this exact thing twice a week for over a year and we're nowhere near getting sick of it.
(If you're trying to conceive I'll assume there's two of you.)
Two avg. salmon fillets
2/3rds to 1 box of light creme fraiche
1-2 tbsp soy sauce (to taste)
Salt and pepper to taste.
Fry salmon in frying pan, break it into bits, add salt and pepper to taste at this time. While salmon is frying, mix creme fraiche and soy sauce.
When salmon is about done, add the "sauce" and let simmer for a few minutes. The longer, the goopier.
Serve with rice or pasta.0 -

I enjoy mine with a mixture of Sugar, paprika, chilli spice and a pinch of salt and pepper. spinkled on top and baked0 -
my family loves when I season it with lemon pepper seasoning and put it under the broiler for 10-15 minutes. Gives it a nice flavor and feels like it has been on the grill without it falling apart on you. I usually searve it with a veggie greek salad with low fat feta and some wild rice.0

I see lots of great recipes here so here is my tip with ANY of these. Cook extra salmon and then make salmon salad with the leftovers for the next day for lunch. Here is my salmon salad recipe from either cooking light or Health Magazine. I can't remember the nutrition info for this but it is light!
7 oz salmon flaked
1/4 cup light mayo
Zest of 1 lemon
Juice of 1 lemon
lots of cracked black pepper
herb of choice
Mix the lemon zest, lemon juice, mayo and black pepper together in a bowl and let sit for 5 minutes. Add the flaked salmon and herbs and mix well.
Makes 2 servings. Serve on whole wheat bread, in a pita, or scooped on top mixed greens.
I have used the following herbs (separately) to make different variations: Cilantro, Italian Parsley, Fresh Dill.
Now you can get 2 days worth of salmon in but only have to cook it once!!

Like a lot of people have said salmon is simple. I toss it in the oven and give it some cracked pepper and lemon juice. That's really all you need to do. You have to be careful with some of those sauces and marinades, no reason to shoot yourself in the foot by adding a bunch of calories.
Pair that up with some steamed broccolli and you've got an amazingly healthy dinner that even a former junk food addict like me can enjoy.

Love salmon, its actually whats for dinner tonight so I may take a look at these ideas on here!
A great website is Allrecipes.com But we normally broil ours for 5 mins on each side flipping twice. We season it with either Mccormick salmon seasoning with a sprinkle of parm cheese on the last flip or some jerk marinade.0
