Steak Bites Wrapped in Bacon and Mozzarella

I hope you all enjoyed your Christmas weekend and didn’t throw away all the hard work you’ve been putting into getting into the best shape of your lives! If you did….all the more motivation to get back on track this week! Today’s recipe uses the most well known keto ingredients of meat and cheese! These are pieces of steak wrapped in mozzarella cheese and bacon. You’ll need quite a few toothpicks for this recipe but the cheese ands up holding the bacon in place pretty well once it melts! This dish makes 4 servings and keeps great in the fridge to be used as left overs for the rest of the week.

Ingredients:
1 Lb Beef Cubes
7 Strips of Bacon
2 Tbsp Safflower Oil
4 Mozzarella String Cheese Sticks
Toothpicks

Directions:

1. Season steak with salt, pepper, and garlic to taste

2. Peel slices of the string cheese and wrap around each cube, securing the cheese in place with toothpicks. (Each cheese stick covered about 3-4 beef cubes)

3. Cut each bacon strip in half and wrap a half strip around each beef and mozzarella cube (once again securing it with tooothpicks)

4. Heat the safflower oil on a skillet over medium-high heat

5. Place beef cubes on skillet and cook, continuously turning, until the bacon begins to brown

6. Once cooked, remove from the skillet, remove toothpicks, set on a plate and enjoy!

    I came up with 1243 calories for the recipe, or 311 calories for 4 servings. But I'm guessing the point is that it's only 2g of carbs per serving, and not how many calories it is.

    Probably a dish meant for a low-carb diet lifestyle, but to me looks like a heart attack waiting to happen! Great party hors'd'ourve, though! Yummy.

    I just went to the website and it says for 5 steak bites it's 353 calories, 18 g of fat and 46 g of protein.

    Nothing's fishy. If your definition of "healthy" is low carb then this is really healthy.

    Personally, I don't care about low carb but I'm a fan of beef and bacon.

    If the ingredients are high quality - the steak is grass fed, the cheese is organic raw milk, and the bacon is uncured - then this is a very healthy meal. Low blood sugar, no huge insulin response, and lots of protein and healthy fat from which to fuel.

    And come flame me all you like, but the whole wheat roll was sure as Hell killing me.

    No, you might not be killing yourself, but for me it would be killing myself. After an exhaustive metabolic panel, my doctor explained to me that calorie for calorie, fat is far healthier for me than carbs. For some of us, this really IS health food. Add a couple generous sides of non-starchy veggies, and this meal is pretty much dead-on for nutrition for me.

    Many of us following low/slow carb lifestyles have very real reasons for doing so. While it's not a panacea, the low/slow lifestyle can work for people with the right metabolism, especially those who feel constantly starved on standard-carb diets.

    I know that low/slow carb isn't for everyone, but it sure gets frustrating when that segment of the community cannot have a meaningful discussion about our approach without ridicule. Maybe we can share our ideas openly for a change?

  • SinorSlim: Question - does the safflower oil make a difference? I only have extra virgin organic coconut oil. Didn't know if this would work in frying it or not.
