i have some ground beef in the fridge I need to use. So maybe a hotdish or meatballs or something like that. Something easy so I can get to zumba on time.

Balsamic glazed cracked pepper salmon and spring mix lettuce. I might make some rice too but haven't decided yet.
  • My philosophy is to eat like a king at breakfast, like a prince at lunch and eat like a poper (spelling?) at dinner...so it is the least amount of cals during the day. BUT I love my spagetti and meatballs...so I came up with this 160 cal dish (super filling and you can add more if you have room for more nutrients and cals).

-1 bag of shirataki noodles = 40 cals (in the tofu, refrigerated section near the veggies..wierd teture for some, but tastes the same as pasta)
-1/2c sugar free marinara = 30 (I like the To Be Healthy spicy marinara)
-4 Quorn meatless meatballs = 90 cals (I love my meat, but these rock and they have less of that darn saturated fat!)

It's a medium sized plate full of awesomeness! I like to add a gree salad to this too sometimes.

Be sure to double check the NI if you make it, I find it differs depending on the type of salmon I use.

Last night was broiled scallop tacos with fruit salsa. Tonight might be a vegetarian rueben or a Thai curry with tofu. We'll see where the winds take me...haha. :)

(And no, I don't feel like I eat the same thing all the time!)

A bit of a plain dinner tonight.

Baked trout with baby spinach, steamed broccolli, and cherry tomato. Couldn't really find anything to fancy it up with, other than a dash of mixed herbs. :(

I have only remade 1 recipe for dinner in the last month. I never make the same thing over and over. There is no way in heck I could stay happy if I couldn't mix up my meals.

My mom and I are on phase 1 of Atkins, and we found a recipe on the website for waffles for any phase, so waffles, bacon and eggs.

I eat all my food by using the low GI diet, so anything really, I even have normal chicken kormas with white rice and just make sure I do some exercise on top of it. The main aim of the GI diet is to control sugar levels so the only things I really need to worry about is bread, potatoes and sweets. I can even eat a bit of milk chocolate when I get a craving for it! If you fancy chips (or crisps if American I believe?! Don't quote me on that!) just cut some sweet potato up and oven bake! So basically what I am trying to say is I eat everything as normal but just swap for healthier options.

Today is just grilled cheese and tomato soup, but yesterday we had herbed zucchini rice casserole w/ chicken mixed in: http://allrecipes.com/recipe/zucchini-herb-casserole/, the day before we had Alton Brown's baked mac and cheese: http://www.foodnetwork.com/recipes/alton-brown/baked-macaroni-and-cheese-recipe/index.html, chicken tortilla soup: http://allrecipes.com/recipe/vegetarian-tortilla-soup/, and grilled sea bass and grilled balsamic veggies before that.

I like to search websites like Cooking Light that separate recipes by category (like best chili) and then get ideas for things to make that way when I am stuck in a rut. If you have a cookbook or recipe file, pull it out and flip through-- you may rediscover an old favorite. GL!
