any recipes for potatoes that are cheap and easy

    this works for regular potatoes and sweet potatoes, cut them into "sticks", drizzle 1 - tbsp of EVOO over them, add seasoning of choice (I use black pepper and a bit of kosher salt) toss to coat, back in 450F over for 15 mins, flip and cook another 10 - 15 mins and enjoy!!!

    I like to simply roast them with a little olive oil, salt & pepper, and rosemary. really simple but a nice side dish and pretty darn tasty

    slice 'em thin, toss 'em in a pan with a tiny bit of olive oil or coconut oil. Fry until golden.

    Slice into "fries" your choice... wedges... shoestring... pop in the oven and bake @350 for 30 mins turning once

    I like to slice them fairly thin and then toss in olive oil. If I want a flavor kick, I will add some of the Hidden Valley Dry Ranch Mix. Bake for 15 mins or so, depending on thickness. Flip over and bake for 15 more min. I doo about a 400 degree oven. Thickness of potato slices will cause the baking time to vary.

    I saw this on america's test kitchen cooking show...

    Pierce holes in some small yukon gold potatoes and place them on a cooking sheet resting in about a quarter inch of water that's been seasoned with salt and rosemary. (I know - weird!)

    Bake about 30-40 minutes until potatoes are tender to the fork.

    Remove pan from oven and squash each potato. On TV they did this by pressing another baking sheet on top of them but I used the bottom of a mug.

    Drizzle some olive oil (I used olive oil spray to reduce fat) over each squashed potato and return to oven for another 20 minutes or so to brown the broken tops.

    Salt and pepper to taste before serving.

    You won't believe how good these are!

    Me too, I have also added other root veggies cut up...even a mixture of sweet and white potatos, onion. garlic..etc.

    Even as simple as a baked potato topped with non-fat plain greek yogurt in place of sour cream....extra protein in the yogurt! :smile:

    For White Potatoes I use lots of random herbs in spice cabinet and 1 tbs of butter melted and tossed then Baked for 20 min @ 350

    Or
    For Sweet Potatoes I do the same butter but only use salt and pepper and bake them at like 400 for 45 min

    first off, get organic. root veggies get all the chemicals that leach from the soil (carrots as well) and you probably don't want a lot of that in your body.

    I usually get red potatoes and soak them, as is, in water overnight. Then cut them in to wedges, sprinkle salt and place on a slightly oiled (olive oil spray) cookie sheet and cook in the oven for about 30 minutes, flipping halfway.

    Tasty, crispy and healthy
