Chicken Breast Recipes

I like to bake chicken breasts in a breadcrumb, parmesan cheese (not much required as such a strong flavour) , and crushed black pepper mix. It's delicious with a homemade type salsa - roughly chopped tomatoes, garlic onion and chilli. For a substational meal, I add some boiled spuds and lots of seasonal veggies.0

Throw frozen chicken breasts in the slow cooker with salsa (NO water needed) in the morning. When you get home shred them with a fork, add some fat free sourcream, and stir. I use this mixture in tortillas, to make chicken enchiladas, over salad, and my husband grabs a fork and eats it cold out of the refrigerator.
How long do you cook these in the slow cooker? with travel time and work, I'm gone about 9 hours - I always worry that the chicken will be dried out... ?0 -
That sounds amazing!0

Put your chicken breast on some tinfoil then cover it in a few slices of tomato, a few slices of carrot, some sliced onion, and a tiny bit of garlic. Wrap it all up like a little parcel and pop in the oven for 40 mins. It keems all th moisture in the chicken and helps it to absorb the flavours. Not sure if it's low in sodium but it tastes DELICIOUS! lol0

MARINADE is what I do with all meats, for at least 24 hours it helps and saves time. then I broil, sear or bake while I'm doing something else. Try organe juice with ginger, lime juice with low sodium soy or lemon juice with low fat Italian dressing as a Marinade.0

My favorite healthy dinner lately is this: Spray cookie sheet with cooking spray or use olive oil. Lay 2-3 breasts, broccoli florets, garlic cloves and cubed butternut squash on sheet. Drizzle with olive oil and season however you like. Herbes de Provence is very good, along with salt and pepper. Roast at 425 for 25-30 minutes. Dinner is served! Try other veggies; green beans are good.0

Bread it with whole wheat flour and crushed corn flakes (instead of bread crumbs), then bake in the oven.0

Marinade it in a little oil, soy sauce, garlic and chilli then serve it with plain steamed veg and a baked sweet potato or, organic black beans! You can do the same with a good fish fillet like salmon or a plain white fish too!
Skip this one... soy sauce is super high in sodium.0 -

How about some great salads with chicken? I marinade mine in a light honey mustard and toss with spinach, cranberries, hard boiled egg whites, sunflower seeds or chopped almonds. Delish! You can make fajitas, too- with lots of veggies! Don't use the store seasoning packets- they are loaded with sodium!0

I have a very restricted diet due to health reasons, I eat chicken every day, usually twice a day. I boil it, small pot with 3 breasts or so, 3-4 cloves of garlic and 1-2 onions, salt and pepper to taste or preference. Then I shred it. I usually make large batches so I can portion it out as I need it instead of constantly cooking.
I usually eat it plain just like that, but it works well to add to anything, or even add some carrots and other veggies and noodles or rice for some soup0
