    Eggs in the microwave sounds totally bizarre. What's the texture like?

    Just like scrambled egg.

    I've always made my scrambled in eggs in a microwave - saves cleaning a whole frying pan/saucepan :wink:
    Gonna have to try the mug thing though :bigsmile:

    Italian-Style Bacon Alfredo Bowl

    Ingredients:
    1 cupspaghetti squash cooked
    1 tablespoonfat-free sour cream
    2 teaspoons reduced fat parmesan
    1 wedge laughing cow cheese
    3 ounces cooked chicken
    1/4 cup roasted red peppers; drained and roughly chopped
    1/4 cup canned sliced mushrooms; drained
    Salt and pepper to taste
    1 tablespoon precooked real crumbled bacon

    Directions:
    Top squash with sour cream, grated parm and cheese wedge, breaking cheese into pieces as you add it. Microwave for 1 minute.

    Mix thoroughly

    Add all other ingredients except bacon, salt and pepper to the bowl and mix well. Micro for 1 to 2 minutes until heated.

    Season to taste with salt and pepper. Sprinkle with bacon

    Per serving 266 calories, 7.5g fat, 951mg sodium, 15g carbs, 5.25g fiber, 4g sugar, 34 g protein
