Crock Pot Greek Chicken

Nutrition (per 1 chicken breast and 1/3 cup sauce) Calories: 283 Fat: 7.5g Carbs: 19g Sugars: 1.5g Fiber: 3.7g Sodium: 683mg Protein: 35.7g
Ingredients (4 servings)
4 – 4oz chicken breasts (I used frozen)
1 onion, chopped
1/3 cup sun-dried tomato (not packed in oil), chopped
1/2 cup no salt added chicken or beef broth
1/4 cup kalamata olives
2 tsp dried oregano
2 Tbsp tomato paste
3 tomatoes, chopped
3-4 cloves of garlic, chopped
For the Topping (each serving):
1/4 cup fresh spinach, chopped
2 Tbsp light feta cheese
1-2 Tbsp green onion, chopped
Instructions
Place all the ingredients (except topping & chicken) in the crock pot. Stir together to mix, then place frozen or fresh chicken breasts on top. Cook on low for 6-7 hours, high for 4-5 hours. I recommend cooking on low if you use frozen chicken.
Top each serving with the toppings above. Serve!
This was absolutely fantastic! Even my four year old tore up the chicken. I served it over whole wheat bow tie pasta. My nutrition was different, but I divided the sauce into four portions (that's just because it was do delicious).
I made this tonight....really good! Next time, I would mix all the veggies and pour over the chicken instead! I think the dish would be better! IMHO0 -

I wonder how it would do with frozen chopped spinach that's been thawed and had all the extra water removed? Tonight I ate my left overs with half feta/parm and it was alright too0 -
