    OMG....I made this for supper tonight and it is FANTASTIC!!! I definitly will be adding this to my recipe book!! Even my fiance loved it!!! What I love is that it is very filling so it doesn't take much to be full....I added a little sprinkle of fat free cheese, a teaspoon of pico de gallo and I used my toaster oven to toast a flour tortillia!! LOVE THIS RECIPE!!!!

    I made this yesterday and my husband said it was the best chicken enchilada stuff I've ever made. He put it inside corn tortillas with enchilada sauce and cheese on top, and I ate it plain. So easy - it will definitely be a regular here.

    I made this last week. I have a little helpful advice. When you put it all in the crock, put the brick of cream cheese on top of all of it and leave it while it cooks the 8-9 hours. Then before you shred the chicken, just stir it in with the rest and it will already be melted. Then shred chicken and stir and it's ready :) It is SOO delicious, love it.

    Frozen chicken I'm assuming she means raw frozen chicken. However- it WILL be cooked enough. The boneless chicken cooks so fast in the crockpot and 6-8 hrs is plenty of time. I cooked an entire chicken in my crockpot and the whole chicken was cooked and DELICIOUS!
    Ok- stupid, stupid question... but are we talking about cooked or raw chicken going into the crock pot? I'm assuming raw or it would be overcooked, but thought I'd ask because I'm anal about chicken being cooked enough!!

    I used raw chicken- unfrozen. It doesn't have to be frozen.
