Recipe name- Chocolate Cupcakes
Taste like Brownies Without the guilt

Number of Servings 24

Ingredients
Libby's - 100% Pure Pumpkin- 15 oz Can, 1 container (1 4/5 cups ea.)
Betty Crocker - Super Moist - Chocolate Fudge Cake (Mix Only), 1 container (1 package ea.)
Batter is very thick so I used a small Ice Cream scoop to put into cupcake cups
350 degrees for 20-25 min or until toothpick comes out clean. Depends on oven. Mine took 25 min

Per Serving: Calories73, Carbs 16, Fat 1, Protein 1, Sodium 159 , Chol 0
You can sprinkle with powdered sugar or top with frosting but the are great plain.

  • We just made these and they are indeed delicious! We only got 20 cupcakes out of the recipe so the calorie count for us was 87 calories, but still worth while. Thanks for sharing!

    I actually just made these today! got 18 relatively large cupcakes (overfilled the tins because I wasn't sure if they would rise properly) using regular-sized muffin tins, about 97 calories each. really tasty, very moist. I had a hard time telling when they were done though because they were so moist. Mine came out tasting a little like pumpkin but not much. Might try it later with a white cake or carrot cake mix and a little pumpkin pie spice.

    Hopefully it is for the regular size because then if you make the small ones then you can eat more than one!!! :bigsmile:

    I've made these several times in the past. It's a recipe from the Hungry Girl website. It tastes just like a very dense chocolate cupcake. No pumpkin flavor at all. Just add the can of pumpkin, no oil, eggs or water. The batter will be very, very thick but they taste wonderful. I love them!!!! I've always gotten 24 regular size cupcakes from a batch at about 95 calories but still very worth it!

    These are great, they're in the Hungry Girl cookbook! It's actually as easy as just those two ingredients, nothing else, and they're soooooo tasty!
