pumpkin protein bars (bodybuilding.com has a great recipe from Jamie Eason) or a pumpkin smoothie with greek yogurt and cinnamon would be a great option too!

    A banana

1 cup almond milk (1/2 milk , 1/2 greek yogurt is delicious too)

1/2 cup pumpkin puree (canned pumpkin)

Squeeze of agave nectar (honey works too)

    Cinnamon

2 scoops of non-dairy protein powder

    this makes 2 servings

here is the video for pumpkin protein bars

I always try to keep a can around for emergencies, it works well for both humans and dogs for diahrrea. Couple of tbs works better than any otc stuff and gentle on tummy, great for kids too.

I don't see any recipes posted yet for pumpkin pudding/fruit dip (vegan).

    1 small can pumpkin
    1 tub/box silken tofu
    pumpkin pie spice
stevia and maple syrup to sweeten (doesn't seem to work well with just stevia. Add a tablespoon or two of maple syrup to take away the astringency from the pumpkin.

Use to dip your fruits in, or eat with a spoon.

I heard on Dr. oz, (it was on in the gym), that you can cut half of the butter out of recipes and replace it with pumpkin.
e.g. if the recipe calls for 1 cup of butter, use 1/2 cup of butter and 1/2 cup ground pumpkin.
apparently it retains moisture so you won't really notice the difference.
Haven't tried it myself yet though.

I often make my pumpkin spice latte:

    1/4c canned pumpkin
    1 c. Unsweetened almond milk
1 scoop vanilla protein powder (or sometimes chocolate)
    Instant coffee grounds
Pumpkin Pie Spice, Cinnamon, Nutmeg, Stevia to taste.
    ~3c Warm water

    Blend and serve. Delicious <3
