Spaghetti Squash Chicken "Alfredo"

Hey guys!! So lately I have become obsessed with spaghetti squash, and trying to find different delicious uses for it. It really does satisfy my craving for pasta, and honestly I wouldn't mind if I couldn't have spaghetti ever again! Takes about the same amount of time to prepare, too! I came up with this yummy dish tonight, and thought I'd share!!!
1 whole spaghetti squash
Boneless chicken breasts or tenders (12oz or so), cut into small pieces
1/2 bag Frozen broccoli, cauliflower & carrot blend
3/4 cup part-skim mozzarella cheese
4 Laughing Cow garlic & herb cheese wedges
Seasonings (I used oregano, basil, chives & black pepper)
Yields: approx 4 servings
Preheat oven to 350.
Cut spaghetti squash in half length-wise, place open-side down on a cookie sheet (I put foil down first and sprayed it)
Bake approx. 40 minutes, or until the edges are soft
Remove from oven, and use a fork to remove the seeds (I found it easier to remove the seeds AFTER it was cooked than before, but whatever works for you)
Once seeds are removed, take the fork and scrape out the insides, it will come out looking like spaghetti
I pre-cooked the chicken (cut it into small pieces) and veggies while spaghetti squash was in the oven.
After you remove the insides of the squash, mix in a skillet with the chicken, veggies, seasonings, mozzarella cheese and the cheese wedges until well-mixed & creamy - enjoy!!
Serving size: 1/4 recipe

Agreed!!!! There are so many different things you can do with it!!! You could even use a small jar of regular alfredo sauce - I wanted something a little lower in carbs, but it really would only add a bit little extra carbs (5g or so) and a few more calories....but personally I love the way it came out with the Laughing Cow! I don't salt my food, and didn't find it bland or anything - lots of flavor!!0 -

looks good- thanks for adding a pic - makes me want to try and mix it up - I usually make spaghetti squash lasagna, but the red sauce is tough - cause of my acid reflux.0

another yummy recipe someone else posted, made it a couple of times now, was a HUGE HIT!! I did alter it slightly - used about 1/2 of a 16oz tub of lite cottage cheese, and probably a lot more Mozzarella than was needed, but was SO GOOD!!! I just used 1 pound of ground turkey, and dumped in a bunch of Italian Seasoning (from Costco). Sorry, I don't have the nutrition info on it.
Spaghetti Squash Lasagna
1 Spaghetti Squash
1 Jar Marinara
1 On the Go 2% Cottage Cheese (4oz) -** I used about half of a 16oz container**
Part skim Mozzarella (or 2% equivalent) - ** I used 2 pkgs (2 cup pkgs) - so about 4 cups total***
Parmesan Cheese
1 pkg Jenni-o Italian Seasoned Ground Turkey or Italian Turkey Sausage ** I used 1 lb ground turkey with Italian Seasoning**
Cut the Squash length wise and scoop out seeds and strings (I use a ice cream scoop makes it much easier)
Spray cookie sheet with Pam place cut side down and bake at 350 for about 40-45 mins
Take out of the oven, flip them over to cool
While cooling....
Brown Ground Turkey Drain off fat
Add Marinara
Add Cottage Cheese
Then scrape a fork across the Squash to make "spaghetti like strands" carefully they may still be hot.....
Place in a large bowl
Add the Sauce mixture and mix together
in a 13x9 pan add half the mixture and sprinkle with mozzarella (how much depends on how cheesy or how calorie laden you want the dish... I use about a 1/2 cup on each layer) ** I used 1 pkg per layer -about 2 cups**
Sprinkle with Parmesan
Add the other half of Squash mixture, Mozzarella and Parmesan
Bake at 350 until Bubbly and cheese has melted.....
p.s there will be "water" in the bottom of the pan as I think it's from the squash’s natural moisture....just let it drain a bit befoe placing on your plate or in your bowl....0 -
yum! I have a gluten allergy and eat paleo so this is a good idea...ive only done spaghetti squash spaghetti, never different sauces!

Spaghetti squash is quite the opposite... more like crunchy/crisp pasta. It's fantastic.
And OP, thanks for posting this. I do squash for my meatsauce all the time. Never thought about using it for other "pasta dishes."0 -
