One thing I learned to makeare these veggie spring rolls. I used to buy them from Raley's but learned how to make them myself. They are a great way to get in raw veggies, and I love em as a snack. You build them just like sushi but without rice or fish. I have used chicken with curry and shrimp in em and its great too. Look in the asian/ethnic part of store for tapioca paper, also called spring roll paper. They look like sheets of plastic and soften when you wet them. They are like 30 cals each I think. Chop carrots and cucumber into long thin strips like you would for sushi, slice thin slices of avocado. Chop a little bit of romaine lettuce into like 4 in pieces. Take one of the tapioca papers and wet it. Layer avocado, then lettuce, meat if you want, cucumber, carrot. Drizzle with a little bit of Mae Ploy's sweet chili sauce, and roll em up. Look on you tube for how to roll spring rolls. This combo is sooo good.
