When I don't want to cook, I heat up the instant pouch of rice and put some tinned tuna and some salad vegies and maybe some nuts and some dip that I like.
Salads, look at some interesting salad recipes which just require you to throw things together.
I'm also a fan of smoked chicken and smoked fish that you can put over rice or a salad.
There are lots of things that you can do with canned tomatoes, or just cook once a week and freeze.

While crockpots are great, I use my rice cooker even more than the crockpot for healthy meals. I bought an Aroma steamer at Costco for $30 last Christmas. It's got a slow cook (crockpot) function as well as timer for rice cooker feature, & traditional white and brown rice settings.
Here's two of my favorite rice cooker/steamer meals:
Salmon, Asparagus & Rice
Put rice & water in the bottom/metal section. In the top/steamer basket - place salmon and asparagus. Close the lid. Press the button to cook & in 30 minutes, dinner's ready.
I sometimes use a knife to cut slits in the the salmon and put strips of ginger and/or Chinese black bean paste in the slits for something different. I've even served this as a meal for company. It's always a hit!
One pot spaghetti and meatballs
Whole grain spaghetti (8 oz), 1 jar of pasta sauce (24 - 32 oz), precooked turkey meatballs. Toss everything in the rice cooker. Fill the empty jar (from pasta sauce) with water and then add that to the rice cooker. Stir all ingredients. Close the lid. Time cook for 30 - 45 minutes (depending on how you like your pasta).
For a richer sauce, instead of 100% water, try 50/50 wine/water or 50/50 beer/water.
To add veggies -- after the spaghetti/meatballs has cooked (timer rings) open the lid carefully and toss in a few handfulls of fresh spinach, or chopped broccoli, zucchini or other veggie of choice. Close the lid for 5 minutes to allow the veggies to steam.
Dinner is served and there's only 1 pot to clean!
I understand some people have been successful cooking chicken and rice at the same time in a rice cooker (similar to the salmon recipe) but I've never attempted it.0 -
I don't always have time to cook. But I motivate myself to do it because when you cook, you know exactly what is going in the food. You know if the kitchen the food being prepared in is clean, if the cook has washed his hands, etc. You also are more likely to end up with food with fewer preservatives and fresher ingredients. It is a pain sometimes, but especially if you make a batch and put it away, it is pretty easy.0

We have a few places in my city (My Fit Foods, Balance Healthy Meals, Real Meals 365, etc.) that you can walk into and purchase pre-made healthy meals to go. You may want to Google "healthy meals to go" for your area and check out what's available.
wish they had this in Madison!!!! I love Chipotle burritto bowls. Try to stay away from prepared boxed meals...so high in sodium. Once in a while is fine but daily and multiple meals a day is horrible. It is however a great place to start and branch out from there. getting a george forman is easy and quick and you can do a chciken breast on there and some steamed veggies (steamer bags in microwave!!!) without kitchen talent or like to cook becuase it is quick and easy!!!!~0 -
