    Yum! I just made this w blueberry Greek yogurt instead of cottage cheese bc we didn't have any and they were delicious!! Felt so much more filling than regular pancakes. Mmmm...

    At the end, since my food processor was already dirty, I put some fresh blackberries in with my SF syrup and whizzed it up to make blackberry syrup! I don't know why I'd never thought of doing that before...I always crave fruit syrups but they never have the sugar free ones in the store :(

    I made these yesterday. Even my boys loved them! They all agreed that they were better tasting then "normal" pancakes!

    Pancake or crepe?

    Using a 1/4 of batter for each one. Either way, crepe or pancake, it is only a 1/4 of a cup per one.

    Can it be made into a vegan recipe? I was thinking of taking out the egg and cottage cheese and adding tofu. I am not Vegan. I am a new Vegetarian... but I do want to try some vegan options. Opinions?
