    Jean Pare is one of my fave cookbook series. She has a whole cookbook fir ground beef. Some are on this site. It's amazing what she can do with ground beef!

    mix about 2/3 with 1/3 breadcrumbs, seasoning, garlic, any herbs you like, and a litte stock.Enough water to bind; you don't need an egg. For more quantity, fill out with cooked brown rice/quinoa/ barley. Scrape the insides from zucchini, eggplant, or tomatoes. Or moshrooms, just twist the stalk out. Fill with the stuffing. Top with very thinly sliced cheese. Bake for about 20 mins. Enjoy..,

    Thank you for all the suggestions! And yes, I did a Google search as well as searched recipe sites, but just kept coming up with the same boring things, and too many used processed foods which I try to avoid.
