  • Am I the only Italian who puts a little sugar in the gravy? Just a bit. I was told it balances out the acidity. I will have to consult with my great aunt. The only one who knows how my great grandma did it. I see the world so differently now....I just don't know what to believe anymore!!!!

  • You know I looked into why some call it gravy and it has to do with it being called "ragu" in Italian and ragu translates directly to gravy. Don't know if that's the truth but that's what I've heard.

    People round here will call meat sauce or sauce that goes over meat gravy and other stuff just sauce
  • I'm from New Jersey where the is a large Italian population and the community is pretty torn on sauce or gravy. It was always called gravy by my family. But my whole world is shaken over this sugar in the gravy thing. What will I do on Sunday?!?!?!?!

    Haha Thats so funny that you are from Jersey too. I live in pa now though. I miss Jersey a lot. I'm going back this weekend to visit my family

    Ragu does not mean gravy. It means stew. Sugo means gravy. Some Italian-Americans started using gravy to mean sauce (probably because of the Southern "Tomato Gravy,") but culinarily speaking, gravy is a type of sauce created from meat drippings. So all gravies are sauces, but not all sauces are gravies. :tongue: Meat sauce, since it has drippings, can be considered a gravy, most likely that's how it started.

    Awesome! This is so good to know. I let my meat cook for hours in the gravy and its so good. But what about the sugar?!!?!

    I live in PA but have lived all around the Northeast and the Sauce/ Gravy thing is common everywhere here from Boston to Baltimore. I got the same story about the Ragu translation.

    Wording is very regional it seems. In the Toronto area, which has the largest population of Italians outside of Italy it's called tomato sauce. Sauce is what most liquids are called with the exception for the traditional Thanksgiving/Christmas turkey dinners where the sauce is called gravy and in restaurants where open faced roast beef/chicken/turkey sandwiches are served. I think it has to do with Canada's culinary roots where it's was split between Britian and France.......the French I would imagine would never call a s sauce a gravy, but i'm sure there is the exception.
