So I just went to the store and found this recipe and it's delicious. I just made it for dinner.
What you need
1 8oz pkg Philadelphia Fat Free Cream Cheese, Softened (I used Great Value haha)
1 7 oz pkg Kraft Fat Free Shredded Cheddar
2 green onions, sliced
6 flour tortillas (6 inch)
1 cup salsa (I used pace hot, but it ended up being really hot so you might want mild)
How to make it
Heat oven to 350 degrees.
Beat cream cheese in small bowl with mixer until creamy. Add 1 cup Cheddar and onions; mix well. Spread down centers of tortillas; roll up.
Place, seam-sides down, in 11x7-inch baking dish; top with salsa. Cover.
Bake 20-25 minutes or until heated through. Sprinkle with remaining cheddar.
(I didn't use 1 cup of salsa. I used about 1 tbsp per tortilla.)

Now I don't know for *sure*, but I did a quick tally of the ingredients list, and divided by 6 = 177 calories.
So I'm guessing the OP is saying 1 serving = 1 enchilada.0 -

So, I decided to try these for dinner tonight. With my ingredients, I worked it out to be 170 calories per enchilada. Since they're small (I mean, 6" tortillas) and not high in calories, I figured I could easily eat 2 for dinner - well, WRONG. It was very filling. I had a side salad and one enchilada and was STUFFED. Couldn't have eaten any more if I had wanted to.
Oh, and I used 1 tbsp of mild salsa per enchilada too - worked out perfectly fine for me.
If I were to make these again (probably will...I love enchiladas but don't get them often), I'd probably put a bit more of the shredded cheese in the inside-mixture. I think personally I'd prefer to have a bit more cheddar taste on the inside, and a bit less on the top. I had too much extra for the tops anyway.
Now I'm just curious if there's any way I could make these properly using a stove. I'm learning new recipes but all too many of them require ovens/microwaves - both of which I won't have starting next month! Guess I just need to experiment and see.0 -

you definitely can because that's how my mom makes them. I'm just not sure how you'd do these because they have cream cheese in them.
But you can cook them rolled up like you would in the oven and then carefully flip them and just cook them until the cheese melts
We use an actual tortilla pan but I think a frying pan would work too0 -

I've made something like this, too.. with the addition of about two cups of shredded chicken breast (added to the cream cheese mixture). It's a good way to make one enchilada go a little farther nutritionally.0

Thanks for sharing...Sounds fairly easy & yummy at the same time!0

YUM! This is something I'd love to try since I'm looking for new recipes all the time. I might use white corn tortillas instead though, they average about 50 per tortilla as opposed to 100.0

This is kind of similar to a recipe I've had before. Only the one I've used before had chicken and some seasons in it.
Definitely going to try it this way as well!0 -

Yum! I think I'll use corn tortillas too, just because I like them better.0
