I am a sucker for Peanut butter.. and PB cookies are my favorite...
So I would love to share with you guys my Easy Cookie Recipe my mom taught me.

1cup - Peanut butter (Creamy or Crunchy)
1cup - Splenda or another no cal sweetener
1 - egg
1 tsp - vanilla extract (optional)
...
Bake until the knife comes out clean ;)
They are so yummy and each are only about 100 calories depending on the size!

I'm cookie baking challenged. What temp and approx how long do we bake them? Also, preheat or no preheat?

I'd say about 350 degrees for 5-10 minutes. Just start checking them after 5. I think this would make about a dozen cookies. I got this info off another recipe on Allrecipes. :)

Simple 1-1-1 cookies are awesome. I've never tried with subbing my stevia in the raw for the 1 c of sugar. I'll be giving that a go in about 8.3 seconds...

Here's how I prepare mine: mix the three ingredients until well blended and make them into balls. Use a fork to smash them down. Bake at 350 for 7-9 minutes. :) I do 7 and then let them rest on the cookie sheet so they're softer.
  • I make these all the time... they're easy and yummy! you don't need flour and they bake up nicely because of the egg. I sometimes add a teaspoon of flour to lessen the "sticky". Don't overbake them!
