    Vanilla Pear Pancakes

    1 packet sweetener
    1/2 cup fat free vanilla yogurt
    1/2 cup plain instant oatmeal
    2 large egg whites
    1 tsp cinnamon
    1 dash salt
    1 medium pear

    Directions

    Peal, half, and core pear. Dice into 1" pieces.
    Place in microwave-proof bowl and sprinkle with sweetener (like Splenda) and cinnamon.
    Microwave on high for 2 minutes.
    Meanwhile, put yogurt, oatmeal, egg whites and dash of salt in blender.
    Add pears. Blend until smooth.
    Use in same way as pancake batter, cooking over medium heat on non-stick griddle.
    Note: makes 3 medium sized pancakes.

    I had 3 homemade buttermilk pancakes with 150 grams strawberries, 2 tablespoons Golden Griddle Low calorie syrup and a cup of breakfast tea for 492 calories. Not bad for a Sunday breakfast. On weekdays I eat oatmeal.
    Why give up on pancakes?

    I use this recipe for oatmeal pancakes ... only 296 cals for 4 small pancakes (less if you use less sugar and skim milk).

    1 1/2 c. oats
    1/2 c. whole wheat flour
    1 1/4 c. milk (you could sub in some apple sauce or cottage cheese if you wanted to)
    1-2 tbsp oil (I usually only use 1)
    1/4 tsp. cinnamon
    1 egg
    2 tbsp. sugar (optional)
    1 tsp. baking powder

    Mix all ingredients together and let stand for a few minutes to thicken. Makes 12 4" pancakes.

    My toddler LOVES these with blueberries, bananas, sauteed cinnamon apples, etc. so I eat them often and they are FILLING.

    I've tried incorporating into my pancakes ingredients like oats, yogurt, whole wheat flour, applesauce. Not necessarily "low calorie" but way more bang for your buck than ingredients like oil and white flour.

    I just made these yesterday, with a few swaps.

    whole wheat flour for all-purpose
    splenda with fiber for sugar
    egg substitute for egg
    unsweetened applesauce for veg oil
    unsweetened original almond milk for buttermilk
    add 1 scoop vanilla protein powder

    I double the recipe and get 15 pancakes. Each has 75 calories, 10 carbs, 1 gram of fat, no saturated fat, 7 grams of protein, and 1 gram of fiber. Delicious and guilt-free!

    I use this recipe for waffles, but it works to make pancakes as well.

    2 cups bisquick
    2 eggs
    1 cup milk (or more/less for consistency)

    This makes 4 square belgian waffles (very thick, about 3-4 inches x 3-4 inches). I'm not sure how many pancakes it would make. Each waffle was about 100 calories
