Not sure if this has already been said but I also add fat free cottage cheese to the mix! MMM <3

Sounds great! I do something similar without the sugar and heating. Just put it all in a bowl and mix. I also add feta when I need the extra calories.

mmm but feta would probably be better!

Oooh! I must try this! It sounds delicious. I'm trying to get more into salads. I made an apple cabbage salad the other day. :)

Tyedye - has your mom tried eating fresh strawberries when she eats sugar? I read online that one of the nutrients in strawberries MIGHT help diabetics avoid blood sugar spikes if they are eaten along with something that has sugar in it.

Aren't strawberries full of sugar? I mean I understand the whole natural vs. refined thing but I thought diabetics weren't supposed to have sugar of any kind (at least not much of it...)

Hi Tyedye ( and everyone). I have been reading about a sugar substitute called Stevia- it is from a Sth American herb, no cals, no carbs and can be used in cooking. A LOT sweeter than sugar too so only a small amount would be needed. Hope this helps!
There is a fair bit of info on google about it. :)
