This morning my husband and I went to the pool, as usual, and after we usually have a cappuccino and split a roll. Most of the bars where we usually go are closed on Sundays so we often stop at a museum near the pool that has a lovely coffee shop with modern sculpture on street level with huge windows so you can watch the street traffic at a busy crossroads. The church where we were married is kittycorner across the street.

There is usually a young woman behind the bar and she makes a good cappuccino. I try to peer through the window first to check if she's there. Today I didn't see anyone but I told my husband "let's go in". Well, big mistake. There was a guy there and he had been sitting down behind the cash register, so I couldn't see him. OK, I think, we'll try him.

I'm telling you this because once you asked me what makes a good espresso. Well--same place, same coffee machine, same coffee blend, same milk for the cappuccino and the only difference was him. He didn't know how to make a decent coffee. It had a bitter, bad after taste, as I told you. It depends on the person a great deal. Sometimes they just give you a watery cappuccino--I call it "colored water". For me, a good one should have the milk whipped up into a cream, a small teaspoon should stand up by itself. Very few know how. I've watched them.

Don't shrink @snowflake954 I imagine myself there through your words. It's same way with the turkey and chicken pot pies at the grocery store. Sometimes, they're great with the correct amount of everything. Other times, they're such a mess and give you the shivers. Everyone is going cuckoo for cocoa puffs around here and now the shelves are bare. Again.
