    Pico de gallo is a MUST have for my eggs lol

    Pretty easy, since I make up the burrtio
    filling ahead of time, and store it in the
    fridge. This is when I get to have bacon! :tongue:

    Take a fajita, half a slice of Swiss, and add
    the filling. Nuke open face for 30 seconds.
    Add Pico, fold and eat!

    For a meal, I'll eat two. One works for a quick snack.
    The fajita size tortillas from Lowes Foods are the perfect
    size, at 70 calories, and 65mg of sodium each.

    The La Banderita fajita size tortillas are 78 calories each,
    (not too bad), but they also have 154mg of sodium. Two
    of the Lowes tortillas don't have that much.


    Alright, back to eggs... :bigsmile:

    My fave way is poached on toasted English muffins smeared with cream cheese, and a little salt and pepper. Only 250 calories and keeps me going all morning. So Yummy too.

    I make tamagoyaki ;3.

    2 eggs
    1 tsp soy sauce
    1 tsp sugar
    Mix then pour into oiled skillet like you're making an omelet, but you roll it like a log, push it to one side, and pour more egg mixture and rolling until all the egg mixture is gone ;3.

    I just recently got on a kick of eggs for breakfast ... I bought a new pan, one of those green pans (don't use spray oil on it though). One egg scrambled, put in the pan, add LOTS of chopped cilantro, some diced onions, sliced mushrooms, sliced mini bell peppers, fresh tomatoes and a small small small amount of shredded jalapeno jack cheese. Yum.

    how does the green pan work? is it worth the money?

    I love scrambled eggs in fried rice or sushi rolls. One of my favorite comfort foods is a poached egg on top of a stir fry of udon noodles, a ton of veggies, some soy sauce, and chili paste or siracha. And deviled eggs - oh my. My kids even ask for those for breakfast.

    I eat what my two-year-old calls an eggie sandwich almost every morning - an egg cooked in one of those tiny one egg frying pans, a slice of cheese, and tomatoes all inside a Thomas' whole wheat 100 calorie English muffin, toasted.

    Im not super big on eggs, but I do like the hard boiled... when i get bored of just plain hard boiled I will cut them up and sprinkle a little ranch seasoning on them (either the packet ranch seasoning or the popcorn flavoring works) Super yummy!

    My favorite: saute lots of seasoned leeks, garlic, spinach, and roma tomatoes. Add egg whites and garlic feta cheese and put under the broiler. So delicious!

    I add 1 egg to one grated zucchini. Mix with garlic powder, salt, pepper, and possibly some basil and Parmesan cheese. Scoop mixture onto a non-stick grill or pan. Brown each side and BOOM! You have delicious zucchini hash brown patties.
