    Have you tried grilling corn? It's crunchy/tasty!

    Lamb chops are great, and also marinated fish fillets (try some of the denser fish like cod, halibut, swordfish, snapper, rockfish).

    We use a lot of different marinades, but the citrus-based ones usually work well with fish.

    Grilled asparagus spears. Marinate them for about an hour in olive oil, salt, pepper, and about 2 TBL of balsamic vinegar. Grill them off heat until desired tenderness. Easy and rockin' delicious.

    Time: 25 minutes
    Serves: 4-6

    Turkey Burgers
    1 pound ground turkey
    4 ounces crumbled feta
    1 cup chopped fresh or frozen spinach
    sliced tomato and red onion (optional)

    Tzatziki
    6 ounces plain yogurt
    1 tablespoon fresh lemon juice
    1/4 cup minced peeled cucumber
    1/4 teaspoon minced garlic
    1/8 teaspoon dill
    salt and pepper

    Preheat oven to 425° (or fire up the grill).

    1. Combine turkey, spinach and feta in a bowl. Mix well, season with salt and pepper.

    2. Form six patties and place on a broiler pan (or on the grill).

    3. Bake on center rack for 25 minutes. If you’re grilling, cook about 7 minutes on each side.

    4. Meanwhile, combine all tzatziki ingredients in a small bowl. Mix well and adjust flavors to taste.

    5. When burgers are cooked through, stick ‘em on a toasted bun and top with tomato, onion, and a hearty dollop of tzatziki. Or make smaller patties and serve two on a bed of lettuce.

    I would also suggest grilling fruit such as peaches. Split peach in half and remove pit. Brush the cut side of each half with olive oil and sprinkle with a little cinnamon. Grill flesh side down on medium high heat for about 5 minutes (try to resist moving the peach around so it gets those nice grill marks) then flip and grill skin side down for another 3 minutes or until peach is soft. Serve with some vanilla frozen yogurt and you are in business. Happy grilling! :glasses:

    Grilled Hearts of Romaine with Lemon Mustard Dressing

    1 tbl EVOO
    1 tsp Dijon Mustard
    1 tsp fresh lemon juice
    2 Romaine hearts halved lengthwise
    1 tbl shredded parmesan Cheese

    - Coat Grill Rack with Cooking Spray - heat grill to medium
    - Whisk together 2 teaspoons oil with mustard and lemon
    - brush cut side of romaine lettuce with remaining oil and place on grill, cut side down
    - Cook about 3 mins until undersides begin to char - turn - cook for about 1 - 2 mins
    - Drizzle Romaine with dressing and sprinkle with parmesan
