have these baking in the oven now, in ice cream cones, so 24 cup cake cones is working out to
85 cal + 20 cone cal = total 105 calories yum!0 -

So I just made the cupcakes and WOW they were delicious. the whole cake mix, cool whip free, and pudding mix brings each cupcake to 154 calories. Does that seem right to you guys. The mix I made only made 17 cupcakes so I took all the calories from the cake mix the cool whip and the pudding mix and divided it by 17 and I got 154. That actually seems like a lot still to me but definitely better than store bought.0

IF your cake mix originally called for milk and eggs, then the nutrition information on the box would not be correct. Thus the number of calories in your calculation would be off.0 -

I also made these yesterday with Dr. Pepper cherry and choclate cake mix for the frosting i used marshmellow fluff yummy my daughter and her friends ate almost all of them i figured them to be about 90 cal per cupcake. Im so excited to try different creations!!!! also two of my girl friend were really leary about them and couldnt tell they were diet cupcakes both wanted to know exactly how to make them I Love IT!!!0 -

Oh i guess that makes sense but the box said that the mix itself was 170cals and when prepared with the eggs and oil it would be 280 cals. OYE!!! So confusing sometimes.0 -
the box gives the calorie info for just the dry mix. since the diet soda adds no calories, you just divide the dry mix calorie count by the number of servings to get each portion's amount.
sometimes mine come out a little flat. if you add two egg whites, this fluffs it right up, and only adds 34 calories to the entire cake.

the box just gives the calories for ONE SERVING [ 1 twelfth]] of the DRY mix --- so 170 calories on the box is not for the entire dry mix just one serving of it so multiply 170 x 12 and then divide by the number of servings you come up with

Low Cal Frosting !!
1/2 cup sugar
2 tbsp water
2 Sweetener, granular, packet (Sweet 'n Low suggested)
2 egg whites (use large eggs)
1/4 tsp cream of tartar
1/2 tsp vanilla extract
1 Combine the first 5 ingredients in top half of a double boiler. Beat at high speed for 1 minute.
2 Set top over simmering water in the bottom of the double boiler. Continue to beat for 4 to 5 minutes.
3 Remove from heat and add the vanilla.
4 Continue beating for 1 to 2 minutes
6 Calories per Tablespoon... mmmm mmmm mmmmm0 -

I used Duncan Hines Moist Delux Confetti Cupcake mix (vanilla) with diet cream soda and Cool Whip Free with a box of vanilla pudding mix... made them today and they're awesome . Only 105 calories per cupcake (90 in the cupcake and 15 in the frosting)! :bigsmile:0

I forget what brand makes it (could be a local brand, I can't remember for the life of me!:ohwell: ) but I saw "Diet Double Chocolate Fudge" soda today. Normally, I'd say YUCK :noway: but I can't wait to try that with chocolate cup cakes and the German Chocolate pudding mix with Cool Whip Free as the frosting0

ideas for icing?
melt 1/4 cup of chocolate chips and 1 tsp crisco in the microwave, drizzle the melted stuff on top like a mini bundt cake! adds only 7 calories! use the foil cupcake liners, the paper ones stick badly! tiny bit of spray with pam helps too0 -

These are awesome. Easy, Quick and a nice substitute for the real thing. Made them last night and we were blown away! :noway: I did Reduced Sugar Yellow cake with Diet Lemon Lime, delicious!! Next time, I'm thinking of doing a chocolate cake with a diet Dr. Pepper. Nice!0

you can over do it on these too! be careful
I did dutch chocolate with coke zero cherry and while raw added a tsp of marshmallow fluff to each one, right in the center,press down gently then in the baking it sinks to the center for a surprise when you bite into it! fun and yummy!0 -
Made cupcakes first, put 3 chocolate chips in each one. It topped it off just fine! Everyone loved it.
Made my girl's birthday cake too.
All of it came out sooooo moist!0 -
