Potatoes: With or without skin

In Indian/Pakistani Cuisine potatoes play a major role and we always use potatoes after peeling their skin. However till I came to US, I never really saw potatoes cooked WITH skin. I read someplace that the skin of potatoes itself holds alot of nutrition.
So. Do you peel or you don't?

I have heard the same about the skin. I like mashed potatoes with the skin left on, but baked potatoes not so much.0

With the skin. I feel the skin is the best part which it is because it has all of the vitamins and nutrients in it0 -
Skin when possible. Baking potatoes really have to be scrubbed to eat the skin.0

The skin is delicious and the most nutritious part. I especially love mashed potatoes (red or white) with the skins left on. Very rustic and yummy.0

I try to buy organic and the way I bake them (sliced with olive oil) I always keep the skin on after I scrub them.0 -

I like to keep the skin on mostly because it's supposed to be more nutritious and has all the fiber but my bf read somewhere that the skin is "toxic" and doesn't want to eat it anymore. Not sure how accurate that claim is because I've always read it has all the vitamins.0

Oddly enough, if they are red potatoes, I will leave the skin on. Otherwise, they get peeled. However, if my husband is the cook, he will once in a while leave the skin on white potatoes, and it doesn't really bother me. When it's a baked potato, I will often eat the skin, so there's really no rhyme or reason to my logic.0

Thin skin potatoes like Red Bliss or Maine, yes. Thick skin like Russet or Sweet, no.
But I hate peeling so I can't claim it is all for healthy reasons.0 -

With skin. Most of the nutrients are in the potato skins.
Just give them a good scrub under running water and you're good to go.
I really like to bake sweet potatoes. Since it's turned to summer bbq weather, I clean a sweet potato, poke holes in the skin with a small knife, rub it with a little olive oil and sprinkle on a pinch of kosher salt. Wrap in foil and toss it on the grill (or directly in the coals if trying to cook a little quicker).
I do make a point to buy local and organic whenever possible, organic at a minimum for things grown on or in the ground. That is very much a personal preference and not part of the question asked by the OP so I won't go further.0 -

Depends on if I have the time (and patience) to clean them well enough. I love the skin but sometimes I will scrub for ten minutes and decide it's never getting clean enough and just peel it.0

I eat the skin as well, whether it be boiled, fried, microwaved or baked..........it is all good:bigsmile:0

All the nutrients aren't in the skin but a decent amount are. The other good reason for keeping the skin on is it prevents nutrient loss from the rest of the potato from evaporation during cooking.0

A lot depends on the potato its self. I think the newer the potato the skin taste better and I leave it on most times as the skin does contain the most nutrition, but if it's an older potato I skip the skin.0

I prefer eating potatoes with the skin on.
Edit: I will, however, remove it if the potatoes have been sitting around awhile and are covered in eyes. Otherwise my skin stays on.0
