Making my hubby a Father's Day dinner-Filet Mignon and asparagus on the grill and twice baked potatoes. And a treat of some sort (cake or cupcakes or something).0

Depends if I get to the grocery store. It will be chicken, sweet potato and spinach if I get there. And a salad. I'm hoping I can resist the banana cake my daughter is making today.0

Fathers Day Dinner - we are ordering from Boston Pizza. Pizza for hubby and one of the kids, chicken strips for the other 2, and maybe a salad for me? There are not many vegan options there.0

Last night was panko fried shrimp with cocktail sauce, spicy sweet potato fries, and honey ginger salad with dried pineapple and soy nuts.

Homemade coconut curry chicken over seasoned rice.
I usually make a large pan of something, separate it into 1 or 2 cup containers, and eat on it the rest of the week.

1 can reduced fat cream of celery soup
1 can reduced fat cream of chicken soup
12 oz fat free sour cream
1 & 1/4 cup Pace medium salsa
1.5 cups reduced fat mexican blend cheese
12 oz chicken breast, cooked and chopped or shredded
8 tortillas (we use basic flour burrito size)
1 tomato, chopped
1 bundle green onions, chopped
(Optional - black olives)
Mix together soups, sour cream and salsa. Take 1.5 cups of the mixture and place into another bowl, then add cheese and chopped chicken. Mix the salsa mixture, cheese and chicken, then divide evenly into the 8 tortilla shells. Roll and place into a baking dish, seam side down. Cover with foil and cook at 350 degrees for 40 minutes. After you take it out of the oven top with the chopped tomato and green onions (and olives if desired). Enjoy!

Going to my sister's for a BBQ for Father's Day. She is planning on steak and ribs for the meats, I am bringing a salmon to grill. Mom is making potato salad. There will be all sorts of veggies both raw and grilled and a salad. It is my cheat day so I am not terribly worried about being too far over my target calories but I will probably go over because of the beer and not because of the food ;p0

Inside I'm putting zucchini, goat cheese, left over pulled pork, and my own tomato sauce.
