Favorite recipe from Pinterest?

I've made a few recipes from Pinterest, but I think the one I made last night was my fave so far. It's not super healthy or anything, but it was homemade so it beats greasy fast food or eating out. See below:
Alfredo Lasagna Roll Ups
8x8" glass pan
1 jar Classico Lite Alfredo Sauce
6 lasagna noodles
alfredo sauce
2-3 chicken tenderloins
Italian seasoning
Mozzarella, Parmesan or whatever cheese you like
Prep pan by spraying with a little bit of non-stick spray and pour some alfredo sauce in to just cover the bottom of the pan. Start cooking the chicken with a little bit of Italian seasoning, and it helps to start boiling a pan of water for noodles at the same time.
When chicken is done, cut into small (slightly smaller than bite-size) pieces and split into 6 piles. When the water is at a rolling boil, drop in noodles and cook for about 8-10 minutes (or until al dente). Drain and rinse with cold water to prevent them from sticking to each other. (*Very Important!*) Lay out the noodles on some wax paper & blot dry with a paper towel.
Spread a little bit of alfredo sauce over each noodle. (Don't put too much or it will make a bigger mess for you to clean up later.) Sprinkle a little bit of Italian seasoning. Take one of your little groups of chicken and try to spread them out evenly over the noodle. Add a little bit of cheese. To roll up, start at one end and roll the noodle over the toppings. They can be hard to handle if they weren't dried. You won't be able to roll them tight and will have to lift the noodle a little over the chicken, otherwise you will end up pushing all the toppings out the other side.
Place the roll-up in the pan, seam-side down so they don't come undone. Once they are all in the pan, pour some more alfredo sauce overtop & try to get in between the roll-ups so they won't stick together. Sprinkle a little Italian seasoning if you want, then add cheese on top. Then bake at 350 degrees for about 30 minutes, or until the cheese is completely melted on top.0 -

Have you ever tried powdered peanut butter? It is 85% fat free. I know of 2 brands, there are probably more. There is Betty Lou's "Just Great Stuff" and there is also PB2. Perfect for in smoothies. Not that it will bring any smoothie under 50 calories but it does help. It's also great on toast, etc.
There is also Trader Joe's Peanut Flour that has received great reviews.0 -

Zucchini Bites
Recipe adapted: The Naptime Chef
yields: 12 mini muffins
1 cups zucchini, grated
1 egg
1/4 yellow onion, diced
1/4 cup cheese (cheddar or Parmesan work the best)
1/4 cup bread crumbs - I used Italian style
Salt and Pepper
1. Preheat oven to 400F. Spray a mini-muffin tin with non-stick spray, set aside.
2. Grate the zucchini and then place in a dish towel to squeeze out the excess water- like when using frozen spinach; if you skip this part, the middle of the zucchini tots will be really soggy while the outside gets crispy and no one wants that.
3. In a bowl combine, the egg, onion, cheese, bread crumbs, zucchini, salt and pepper.
4. Using a spoon or a cookie scoop, fill the muffin cups to the top. Bake for 15-18 minutes, or until the top is browned and set.0 -

Sliced baked potatoes: thinly slice almost all the way through. drizzle with butter, olive oil, salt and pepper. bake at 425 for about 40 min. OMG!

So I find myself pinning a LOT of recipes on Pinterest. But I realized two things yesterday. 1) the calorie count in the pin itself is usually WAY off and only an attention getter (example: smoothie with 1 tbsp PB, 1 cup of milk, and other stuff that claimed it was only 50 cals. I wish!). 2) I almost never make ANY food I pin! Healthy or not!
So yesterday I decided to change this, and made these delicious oats/PB/banana bars. 9 servings, 127 cals each (I used simply JIF PB and 2% milk). Filling, delicous, and easy! I'm thinking of using pumpkin puree next time instead of a squashed banana.
So my question: what's YOUR fave pinterest recipe? Healthy recipes always welcome but not required! Everyone has to splurge sometimes

This one of my favs!
Except, I add 8oz grilled chicken breast, only use 1 ear of corn, and sub the veg oil for EVOO. Divided into 2 servings its 514 cals, pretty big serving, and soooo goood!

I know exactly which "50 calorie" shake you are talking about! As soon as I saw the ingredients I knew that thing has at least 300 calories in it. I wonder how many people are eating it a lot thinking it is only 50 calories. People can't be that inept at math, right?
