Lift weights. That is how you will tone up. Cardio will keep you slim, lifting will get you the muscle tone you desire.
As for counting… do it. And make sure you eat a lot of protein while you're at it.0 -

There's nothing in your food diary (at least, on the days I looked at) but all the foods you mention are high in carbs.
It's possible that raising your fat and protein intake would stop your cravings. I know that during the week I rarely have cravings, because I keep carbs low.
Of course, I could be way off base -- it's impossible to give much advice at all without knowing what you eat.

I think that as long as you are eating the right foods, you don't need to count calories. Humans, like all animals, wont overeat, or undereat, in their natural environments. As long as you are eating the whole natural foods that humans have been eating for thousands of years, your body will count calories naturally. The only reason people need to consciously count is when they eat artificially concentrated foods not found in our natural environment.
So we won't overeat if we have to go out and forage berries and kill our own meat? Not very useful in our urban lifestyles (aka: reality)0 -

I appreciate that you believe strongly in a specific approach to eating and diet, and that it has by all appearences done wonders for you.
But I don't see how you can be thinking crisply and be observant, and look at the world we all share -- and not just the western diet for humans of the last couple of hundred years -- and possibly believe that "Humans, like all animals, wont overeat, or undereat, in their natural environments." C'mon man, this sort of hyperbole just weakens any credibility you might try to bring to a discussion.
