    hey.. I found that when I used an egg white to coat the sweet potatoes instead of EVOO, they are actually crispier! But I don't microwave them first either...

    I'm going to have to try that, thanks!

    I had a portion of wholewheat pasta bake and salad :D I have to make enough for 6 for a family of 4 because my brother and dad insist on HUGE portions... but it's still less than 340 cals per portion!

    Last night: 97% fat free Hebrew National Hot Dogs, Spaghetti Squash with no salt seasoning, flax bread, mushrooms and spicy mustard, small salad and grapes

    Tonight: Probably Chicken stir fry or possibly grilled chicken with a fruit salsa on top with a side of sugar pea snaps, green beans or broccoli. Possibly some coconut, too, not sure.
  • Homemade stir fry beef in oyster sauce with rice. Bit of a treat at 800 cals but I earned it today! I trim the beef well and mix in loads of mushrooms to pack it out and fill me up more. It was yummy!

    Family is having frozen pizza as I work. I get nothing, over indugled at lunch I am shocked a brisket sandwich had 790 calories!! Maybe some cereal? or some yogurt.. SIGH......

    No pics but hamburger and sweet potato fries. Fries using sweet potatoes not from the freezer.

    I had pan-fried swordfish with roasted veggies and chimmichurri sauce. I wasn't going to have rice, but it came from a restaurant so I used 2/3cup of the white rice provided to soak up the sauce. Mmmm. Yummy, a little naughty but still within my calories/macros.

  • We are having baked chicken parmesan (recipe from skinnytaste.com). I will be having steamed broccoli as my side while the kiddies will be having angel hair pasta! Very yummy!

    FlatOut Pizza

    FlatOut flatbread (Healthy Grain with Flax)
    1/8 cup low-sugar pasta sauce
    1/4 cup shredded part-skim mozzarella cheese
    10 turkey pepperonis

    Bake at 350 degrees F for 8-10 mins.

    Amy's organic chili with a sliced steamed yellow pepper mixed in. So filling! What I've been craving lately is GRILLED FISH though, looks like I'm not the only one ;)

    Skinny Chicken Marsala. Delicious!


    Want flavor without lots of salt and fat?
    Try this dish, which combines wine, lemon juice, and mushrooms into
    a delicious sauce.
    1/8 tsp black pepper
    1/4 tsp salt
    1/4 cup flour
    1 lb skinless, boneless chicken breasts
    1 Tbsp olive oil
    1/2 cup Marsala wine
    1/2 cup chicken stock
    1/2 lemon, juice only
    1/2 cup mushrooms, sliced
    1 Tbsp fresh parsley, chopped
    1. Mix together pepper, salt, and flour. Coat chicken with seasoned flour.
    2. In heavy-bottomed skillet, heat oil. Place chicken breasts in skillet and brown on both sides, then remove and set aside.
    3. To skillet, add wine and stir until heated. Add juice, stock, and mushrooms. Stir, reduce heat, and cook for about 10 minutes, until sauce is partially reduced.
    4. Return browned chicken breasts to skillet. Spoon sauce over chicken.
    5. Cover and cook for about 5–10 minutes or until chicken is done.
    6. Serve sauce over chicken. Garnish with chopped parsley.
    Yield: 4 servings
