EVERYTHING.
avocado, diced turkey, goat cheese, orzo, olives, corn, black beans, tuna..............most leftovers from last nights dinner end up in my lunch salad0 -
Chicken, blackberries, strawberries, almonds, feta cheese and fat free raspberry vinagrette.0
-
I either make a strawberry spinach salad with reduced fat feta and slivered almonds or I do a simple lots of veggies salad with carrots, cucs, green pep, and tomatoes in it:) That's whats for lunch today:)0

If you like blue cheese - I made a really easy and satisfying salad - take 1/4 of an entire head of iceburg lettuce - put it, like a wedge on a plate. Drizzle with 2tbsp blue cheese bottled dressing; 1/4 cup of crumbled blue cheese; 1 bacon strip crumbled and a few cherry tomatoes. I served this to company and they loved it.0

mixed greens, onions, peppers, carrots, feta, & chicken with balsamic is my favorite!0
-
Not really a "salad" but my family has been loving the container of finely chopped fresh broccoli, cauliflower, red-green-orange-yellow peppers, celery and grated carrots that I keep in the fridge. We add a little fat-free feta and some light balsamic vinagarette (or Ranch:-) and it is delicious! Even a little "sweet" with all the peppers! This has replaced our "salads" and cooked veggies lately---- too hot to cook any more than absolutely necessary.0

blueberries and pears with grilled chicken
turkey bacon, tomato, cucumber, avacado, etc.
Shrimp Cobb Salad (from SkinnyTaste.com)
I try anything. If you can serve it on bread - serve it over lettuce.
Today is tuna, celery, hardboiled egg, peas and a tiny bit of onion.0 -
Mixed greens and baby spinach with sliced pears, crumbled gorgonzola, candied pecans, dried cranberries and balsamic vinaigrette.0
-
spinach, chicken, apples, bleu cheese/feta/goat cheese, almonds, crasins (I know these are high sugar, so you can leave them out if you want), red onion.
Spinach/romaine, black/green olives, carrots, tomoatoes, cucumbers, onions, green peppers, chicken/turkey/tofu/egg, peppers, feta/bleu cheese (I like these cheeses because you don't need a lot for a lot of flavor), walnuts
Fruit goes great in a salad as well!
As far as dressings red wine vinegar, or balsamic vinegar are awesome low cal healthy options, and honestly with fruits like oranges, pineapple, and strawberry you don't really need a dressing because the fruits do well at adding moisture and flavor. Fresh squeezed lemon juice also works well. Also add in any spices you would like to the vinegar to give it a little bit more pizazz0 -
I LOVE putting hard boiled egg whites on my salad. I end up being happier than a pig in mud if I have a salad with a nice basalmic and egg whites. Thin granny smith apple slices are really good in a spinach salad with a little feta and glazed walnuts.0

Since it's summer I've been strawberries, chicken and feta with a blush vinaigrette. Yum!
I also LOVE avocado in my salad.
In the winter, I bake bbq chicken and toss it in my salad with low fat ranch.
I love a good salad!0 -
my last two jobs were at small, family owned salad/organic places. this is my specialty.
artichokes, roasted peppers, sweet peppers, fresh peppers, olives (all kinds) tomatoes, pasta, diced chicken ham or turkey, pickles! (my fav) avocado, apples, craisins, corn.
you can also skip the dressing and make a no chip taco salad if you are trying to have lower carbs. just use some fresh guacamole, and a bit of low fat or fat free sourcream and salsa as the dressing.
baby corn is also good in salads. you can even put pasta salad on top of lettuce and let the dressing be that for the whole salad.
i like to use crumbly cheese because if you shake or mix your salad you can use a lot less cheese and still spread the flavor through out.
of course there is always carrots, celery, cucumbers, broccoli, mushrooms, onions. also snow peas or green beans work really well.
my favorite combo at one place was: lettuce, broccoli, feta, tomato, artichokes, EVEN beets, a little bit of pasta, chicken and i would shake it all up and either use a fat free italian or some times a low fat ranch.
the classic cobb - bacon, blue cheese, chicken, olives, tomatoes, avocado. bacon also is really easy to spread through out a salad to save calories, just chop it up reallly well.
i also used to make my bf a buffalo chicken salad: tomatoes, carrots, blue cheese crumbled, chicken, celery, lettuce, and sometimes pasta. then i would sprinkle hot sauce on top and shake it up. have with ranch or blue cheese.0 -
Made this one the other day:
Spinach, blue cheese, walnuts, blueberries with homemade blueberry vinaigrette (balsamic vinegar, olive oil, blueberry preserves, salt, pepper). YUM!0 -
I think my salads are boring, but they do the trick - I alternate lettuce...spring mixes, boston lettuce, romaine...I always add shredded carrot, grape tomatoes, cucumbers, bell peppers. I throw grilled chicken on top, and organic Cindy's kitchen creamy italian dressing.0
-
Chicken. Bacon bits, sometimes eggs always newmans own light balsamic vinaigrette. I don't do much unnecessary. I just do whatever it takes to make the salad have at least 15 grams of protein, or it'll be a waste of calories. My salads come out to about 250 calories with 30 grams of protein. My "diet" plan is just high protein and low calorie. I do the high protein because it keeps me full. I worry about nothing other than those 2 things.0

3. Sometimes for dinner, I grill a sirloin ... Romaine, tomato, croutons and Kens light Caesar with strips of sirloin on top... Delicious! (around 500 cals)0 -
Romaine lettuce, tuna, egg whites, fat-free Italian dressing. Protein packed salad.0

spinach, mandarin oranges, chicken, shredded cabbage, shredded carrot, cucumber, thinly sliced radish, and strawberries. And I make a homemade ginger dressing below that is to die for!
http://www.topsecretrecipes.com/Benihana-Ginger-Salad-Dressing-Recipe.html
Instead of the peanut oil, I use a little canola oil or extra virgin "lighter flavor" olive oil. Instead of the sugar I add 2 tablespoons of Trop50 orange juice. I could eat this dressing everyday... it is so light and low calorie too!0 -
