Chicken with some BBQ sauce and corn...but I'm still 500 calories short so I'm looking for another quick fix "dinner" lol

Quesadillas.
I used wheat tortillas, pinto beans, and grated cheese. A touch of butter in the frying pan, one tortilla, some cheese, a good layer of beans, more cheese, and another tortilla. A bit more butter on top so that when I flip it, it still doesn't stick. Add some fresh, raw veggies on the side for a good mmmmmmm with a decent amount of calories (I had 2 of them, which is 4 tortillas -- to much probably! -- but it was only about 800 calories)0 -
Made a delicious caprese panini! Flat bread, fresh mozzarella, tomatoes, basil, balsamic vinegar and I added chicken for a little protein0

Baked wild alaskan salmon, veggie salad (bell peppers, red onion, green onion, mushrooms, radishes, tomato, cucumber and cashews). The salmon was fantastic!0

my dinner was 190 calories
it was salad
3 oz chicken breast
cup spinach leaves
slice tomato
1/4 cup ff feta
tablespoon Greek vinaigrette
i then had my last meal of the day/aka the evening snack
it was a protein smoothie of:
body fortress advanced whey 1 scoop
cup almond milk unsweetened
couple frozen peaches and splenda
accompanied with slice light wheat bread (35 cal a slice!)
and tablespoon sugar free smuckers strawberry preserves.....
very filling 230 calories0 -
Hubby worked late so I heated up a Lean Cuisine Chicken Flat Bread.Then for dessert I warmed up a deep chocolate Vitatop with fat free reddi whip.YUM!!0

Dinner was late for me too so I had a Lean Cuisine Chicken w/broccoli & pasta to which I added an ounce of chopped leftover grilled chicken breast to increase my protein (360 calories). Yesterday, I had a big satisfying salad: 5 oz chopped grilled chicken breast, 2 cups chopped romaine, 1.5 TB chopped red onion, 1 celery stalk chopped small, 1/6c (or 2TB) dried cranberries, 1/8c feta cheese dressed with lemon juice (364 calories). Thanks for the post - got some good ideas from everyone!0

Veggie Lasagna with soy "mozzarella" cheese, ricotta, mushrooms, spinach, roasted red/orange/yellow bell peppers, onion and Tempeh.0

I used a vegetable peeler to make 2 zucchini into "pasta" and cooked it on the stovetop with 1 tb minced garlic and 1 tb coconut oil, with one can of rotel tomatoes n chiles and a tb of the pasta sauce that was going on the family's pasta.0
