Chicken with some BBQ sauce and corn...but I'm still 500 calories short so I'm looking for another quick fix "dinner" lol

That's exactly what I had for dinner. + 3 beers and some salad.

    Quesadillas.

I used wheat tortillas, pinto beans, and grated cheese. A touch of butter in the frying pan, one tortilla, some cheese, a good layer of beans, more cheese, and another tortilla. A bit more butter on top so that when I flip it, it still doesn't stick. Add some fresh, raw veggies on the side for a good mmmmmmm with a decent amount of calories (I had 2 of them, which is 4 tortillas -- to much probably! -- but it was only about 800 calories)

Dinner was late for me too so I had a Lean Cuisine Chicken w/broccoli & pasta to which I added an ounce of chopped leftover grilled chicken breast to increase my protein (360 calories). Yesterday, I had a big satisfying salad: 5 oz chopped grilled chicken breast, 2 cups chopped romaine, 1.5 TB chopped red onion, 1 celery stalk chopped small, 1/6c (or 2TB) dried cranberries, 1/8c feta cheese dressed with lemon juice (364 calories). Thanks for the post - got some good ideas from everyone! :)
