    :tongue: Oh pure goodness. My family loved these. They are so moist and delicous. We added a fouth cup of chocolate chips that added 20 calories to each muffin. My husband was surpised that he didn't miss the frosting. We will be making these again. Thank you so much for the recipe.:flowerforyou:
  • We just made these tonight and loved them! We added an extra teaspoon of pumpkin pie spice.

    actually I made these last week with both a spice cake mix and a chocolate one
    the eggs and the water are not necessary... all I used was the mix, the pumpkin and a good mix till it was all incorporated... and then I dropped spoonfuls on cooking sheets so that they cooked up as muffin tops --- 24 at I think 2 pts each :) no additional cals from the eggs :)

    I tweaked a weight watchers recipe I found online.

    1 box spice cake mix
    1-14 oz. can of pumpkin
    2 eggs
    1/2 cup water

    Bake according to the box direction. Makes 24 at 98 calories a piece. It's awsomely delicious. The 2 eggs only added 6 calories per cupcake and made them rise and get nice and fluffy. Just added that water cause the batter seemed way to thick for cupcakes. They are in the food bank as Semi Homemade Pumpkin Spice Cupcakes. Just remember if you add frosting that will up the calories (although if I had some cream cheese in my house that would have been totally worth it!).

    How was the chocolate cake mix with the pumpkin? I was thinking about trying that, but wasn't sure if the pumpkin puree would give it a weird flavor (not that you can really mess up chocolate:tongue: )

    It was delish!!! you don't actually taste the pumpkin it just gives this nice super moist amazing consistancy to the whole thing....super yummy, even the spice mix is not that pumpkinny--- I gave both to my neighbor who HATES pumpkin and she loved them both, as well as the oatmeal choco cranberry cookies i made with pumpkin,

    I made this as a cake - used the Cream Cheese Icing recipe with the Cream cheese, confectioners sugar, vanilla and lemon) ABSOLUTELY DELISH!!!!!! Next time I'll use egg beaters but I was out.

    I make one that my whole family love. .

    1 box of spice cake
    1 15 oz can of pure pumpkin

    That's it. Nothing else. Makes 18 muffins. Bake for 22 mins. in a 350 oven. Easy, easy, easy!!

    This has 120 cals, but you can make it less if you make more muffins.
  • SO I just made these, and OMG they are so delicious! Only thing is that I messed with the recipe! I used:

    I box of spice cake
    1 30oz can of pumpkin

    Blend them together and then fill muffin or small bread loaf pans 3/4 full with mix.

    Then mix together:

    1 pkg of Lowfat Cream cheese
    1 cup of powdered sugar
    1 tsp vanilla

    Take a tablespoon of the creamcheese mixture and spoon into the center of each muffin/mini bread loaf.

    Bake as per the directions on the box however add an extra 10 minutes so as to cook throughly!

    These are so good and then no need to top with icing! Just yummy!!!

    I am making these today and they are SO good! :) I have to add some extra water and 1/4 cup flour due to altitude. I hope more of you enjoy these too!

    i make these all the time only i dont use the water and they turn out fine

    I made these this before I found this recipe. LOL Except, I didn't have a spice cake mix, so I used Classic yellow, I didn't use the eggs either, so they are more like muffins instead of cupcakes. Even my picky eating 3 year old likes them. Oh yea, I added a cup of chopped nuts and a scoop of protein powder to give them some extra power. Very yummy!
