1 (7.5 oz.) Can Pillsbury Buttermilk Biscuits
5 oz. Diced Cooked Chicken Breast
1 Can Reduced Cream of Chicken Soup
1/2 Cup Fat Free Cheddar Cheese
1 tsp. Dried Parsley Flakes
1/2 tsp. Black Pepper
1 Can Low Sodium Veg-All, drained

Preheat oven to 400 degrees. Separate biscuits and place each biscuit into the well of an un-greased nonstick (12-hole) muffin pan. Press dough up the sides of each well to the edge. Combine all ingredients. Spoon mixture evenly into each biscuit cup. Bake approx. 15 minutes or until golden brown. Let stand 2-3 minutes before serving.

Serves: 10
Per Serving: 90 Calories; 1g Fat (9.8% calories from fat); 7g Protein; 13g Carbohydrate; trace Dietary Fiber; 10mg Cholesterol; 456mg Sodium. Exchanges: 0 Grain (Starch); 1/2 Lean Meat; 0 Fat. WWP: 2

    I'll make these tomorrow but will cut the recipe in half since I'll be the only one eating them (we had chicken pot pie not too long ago and the fam isn't ready to eat pot pie again):wink:

    They don't love pot pies as much as I do LOL so they need a break.
    Too soon to make them eat it again.
    Homemade pot pies are way better hands down.. less sodium too!

    I just made these for dinner... WOW! they are tastey. I am a picky eater so I am very impressed how they turned out to where even I loved them.

    I think next time I make these I'll have to flatten out the bisquits a little more using a rolling pin I used the jumbo sized ones and just pressed the bisquits into the muffin pan and found that was fine and all but I think I'll try next time to make a cover. :smile:

    I also found that next time I'll cut the chicken bits. The chunks were normal bite size but I think for the purpose of the pot pies they need to be cut up a little more.

    overall it turned out great. Very impressed for the first time.

    also maybe next time I'll serve them with a side of mashed potatoes.

    My husband wants them again sometime.

    I made these today and they were sooo yummy, fast & easy to make.
    Hubbz and kids ended up eating some and loved them.
    I used turkey breast instead.
    I skipped on the cheese(on mine) & parsley (I didn't have any).

    I would love to use the biscuit in the muffin tins idea for a breakfast dish.
    Mix some scrambled eggs, turkey bacon & sprinkle with cheese... :glasses:

    and thanks for the extra tip and reviews too!!! My hubby loves my homemade chicken pot pie, I bet he likes these too....maybe even my son! kids see mini things like a treat LOL....if I gave him a slab of pot pie he'd look at me like I was torturing him, but if it comes in a cute little pie from he just might enjoy it more lol!

    I"ll try the eggs next time! How would that work, scamble the eggs before putting them in the bisquit?

    Yup, scramble the eggs and mix in some turkey bacon or whatever you want (already cooked and crispy) then pour in the biscuits. Sprinkle the cheese and voila!

    These are amazing! I told my mom about them, who's a cook, and she was coming up with all sorts of ideas, like quiche, and eggs, and beef pies, all sorts of stuff! Thanks Healthier _Me this was a great ideas. My boyfriend really loves the inside mix and wants me to try just that over some barley! Thanks again
