    Skinnytaste.com has a wonderful reciepe for pumpkin butter. I made that and added 2 tbls. of the pumpkin butter to 1/2 c of plain yogurt and sprinkled a little granola on top. Yum.

    i posted this before, and maybe it doesnt reallly follow alll of our rules of dieting, lol but its delish!
    i make pumpkin pie french toast for my kids almost every sunday. its just ur regular french toast soakk (eggs, milk and vanilla) but then i dump about half a can of pumpin into it and some pumpkin pie spice :) LOVE IT...i skip putting the butter on top and use old tyme no sugar added syrup on top :D

    This isnt a recipe but I saw it on one of my friends diary's - Thomas's makes a pumpkin spice bagel thin. I tried one today, and YUM is all I can say!

    Vegan Pumpkin Bread

    14oz can unsweetened pumpkin puree
    2 cups sugar
    1/4 cup oil
    3/4 cup applesauce
    3 TBS ground flax seed/9 TBS warm water
    3 cups flour (I used gluten free)
    1 tsp cloves
    1 tsp cinnamon
    1 tsp nutmeg
    1 tsp baking soda
    1/2 tsp baking powder
    1/2 tsp salt

    Preheat oven to 350. Lightly oil two, 9 inch loaf pans. In a large bowl, stir together the sugar, oil, applesauce, egg replacer (flax seed) and pumpkin.
    (The egg replacer is made by whisking together the 3 TBS of ground flax seed and water until the gooey/thick consistency of an egg)
    In a medium bowl, stir together the flour, cloves, cinnamon, nutmeg, baking soda, baking powder and salt. Stir gently into the pumpkin until it's just mixed. Spoon the dough evenly into the two loaf pans.
    Bake for 55-60 mins of until a toothpick comes out clean. Makes 2 loafs.

    Pumpkin pie french toast
    2 eggs
    1/4 cup milk
    1/4 cup pumpkin puree
    1/4 teaspoon vanilla
    1/2 teaspoon cinnamon
    1/4 teaspoon ginger
    1/8 teaspoon cloves
    1/8 teaspoon nutmeg
    2 tablespoons brown sugar
    8 slices of bread

    1. Mix the eggs, milk, pumpkin puree, vanilla, cinnamon, ginger, cloves, nutmeg, and brown sugar in a low flat bowl for easy dipping
    2. Dip the bread into the egg mixture on both sides and grill in a pan until lightly golden brown, about 2-3 minutes per side
    3. Serve with maple syrup

  • I look forward to my yearly Roasted Chili Pumpkin Seed gorge. Roast pumpkin seeds with chili powder (and garlic powder if you like) to taste with a small amount of oil (1 tsp for 4 cups seeds when I made them this time) and a pinch of salt. 350 degrees until they are crispy and delicious.

    There is also a pumpkin spice cream cheese spread by Kraft... Yummy on the Thomas pumpkin bagel thins!!
