Orange & Poppyseed Muffins - 117 cal and HUGE *pics*

Really am in a baking mood today!
Yes, these use the WHOLE orange - seeds, peel n all ;)


Orange and Poppyseed Muffins

2 1/3 cups sifted self raising flour
One whole large navel orange
1/4 cup brown sugar
2 tsp vanilla essence
2 eggs
1 tbsp honey
2 tbsp poppyseeds

Boil orange in water for 45 minutes until softened (reduces bitter taste in skin).
Process with mixer wand, add sugar, eggs, vanilla and honey and process until smooth. Stir through poppyseeds.
Add wet mix to sifted flour and stir till just combined.
Fill 12 lightly oil sprayed party tins 3/4 full with mixture.
Bake for 12 minutes at 160 degrees (320F) or until springy in the middle and starting to brown.

117 calories each and yummy!

    I assume so? Thin strong vanilla syrup type stuff? Not that it matters much, not a vital ingredient.

    These have a slightly tart taste that results from using the whole orange, but in a good way!

    130 calories each and yummy! (***ETA!! I am SO sorry, have just re-weighed my flour and I screwed up the weights. This brings them to 130 calories each, not 117!! Sorry!!! **)

    So sorry, please see above calorie correction due to some fool using a database entry and not weighing her flour. You'd think I'd know better right? ;)
    Anyway, all weighed and corrected now. Thank goodness it only added 13 calories!!!
