Taco Soup in the slow cooker (AKA: Crockpot)
I do this one in the slow cooker - you can make it vegetarian - just omit the meat, I've made it both ways.
Brown 1 pound of ground turkey, drain off fat, dump into slow cooker.
Add:
1 can of corn (drained)
1 can of Creamed Corn
1 can of Rotel
1 can of stewed tomatoes
2 cans of beans (your choice- sometimes I do red kidney chili beans, sometimes white beans, sometimes I get the S & W beans with chipotle seasoning on them)
1 packet of Taco Seasoning
2 soup cans (from the corn or beans) of water
Mix well, and cook on low all day - your kitchen will smell AWESOME!!!
I serve with sour cream, Juanita's chips, shredded cheese, and taco toppings (fresh tomatoes, onions, etc).
Hubs loves this soup, and when coming home for dinner can smell it outside and is excited for dinner.0 -
Loaded baked potato-- my version doesn't use a million pounds of butter, which makes it awesome / sad. Sorry this recipe is so rough-- I've made it so many times now that I don't really do measurements, but here's my guess:
4+ servings
4-6 Russett potatoes, cubed (I leave the skin on)
1 small onion, diced
6 strips (turkey) bacon* diced
2 cloves garlic, minced or pressed
olive oil (I use a Misto spray, so just use whatever you usually use to sautée)
cooking water + 3-4 cups water
2-3 c chicken or veg broth
Sriracha hot sauce to taste*
1 c milk
2 T flour
4 oz cream cheese*
Boil the cubed potatoes in some water until they're almost cooked / tender (usually 15-20 min or so). Meanwhile, in a pan, sautée the bacon until almost fully cooked and crispy. Add the onions, then the garlic. Remove from heat when everything's cooked to your liking. Once the potatoes are almost fully cooked, drain the water (it'll be kind of starchy, so it's nice to use new water for the soup itself). Add the potatoes, onion, bacon and garlic to a large pot (I use the one I just boiled the potatoes in), then add in enough water and broth to make things as liquidy as you want (I like thicker soup, but some people like a thinner soup). Stir in sriracha, if desired. Let everything simmer away for another 20 min or so. Whisk together the flour and milk, add to soup. Add cream cheese. Give everything a good stir and cook for another 10-ish min. Garnish with green onion, reserved bacon crumbles, and/or shredded cheddar cheese.
* = optional but recommended (and I don't want to enter the pork v. turkey bacon debate... let's just say in soup, who cares?)0 -

Onion Soup
2 red onions, peeled and thinly sliced and sauted in butter or olive oil until slightly browned
2 yellow onions, peeled and thinly sliced and sauted in butter or olive oil until slightly browned
2 white onions, peeled and thinly sliced and sauted in butter or olive oil until slightly browned
1/4 teaspoon of sugar
1 clove garlic, minced
8 cups of beef stock
1 cup of red wine
1 tablespoon Worcestershire sauce
1/4 teaspoon of dry thyme
Salt and pepper
You can toast french bread and put in the soup and cover with swiss cheese then bake in oven to make this French Onion Soup.0 -
I love the classic chicken soup. I have a recipe, but not home right now. If you would like it, send me a message. It has an Italian twist to it and has mini meatballs in it. Sooo good.
Also, going to try this when it gets a tad cooler out.

I love a super spicy carrot soup that I make with red curry paste and Ash-e-resteh, a traditional persian soup with a lot of beans. It's so flavourful !0

I love Savory Moroccan Soup! This recipe makes 4 servings
3 C low-sodium chicken or vegetable stock
1 can (14.5 oz) no-salt-added diced tomatoes, with juice
1 C zucchini, sliced into half circles
1/4 C canned chickpeas, rinsed and drained
4 artichoke hearts, cut in half (frozen or packed in water and drained)
1/2 C whole-wheat couscous
1/4 C fresh parsley, chopped
1/4 C raisins
2 scallions, thinly sliced (including green tops)
1/4 tsp cinnamon
1/4 tsp cayenne
1/2 tsp basil
1/2 tsp oregano
Bring stock plus 1 cup water to a rolling boil.
Reduce heat, add remaining ingredients, and simmer uncovered about 5 to 7 minutes.
Add salt and pepper to taste, and serve.

Hearty Mountain Chicken Stew
Buy a whole chicken and roast it. Take the carcass and other chicken bones and simmer (don't boil!) for about 4-6 hours with celery, ginger, carrots, potatoes, onions, leeks, rosemary, dill, thyme, oregano (Fresh) garlic, and turnips. Add in the roasted chicken pieces and simmer for another hour. Before serving, puree the chicken skin with a little bit of oil until smooth and whisk into the hot soup to immerse well. Serve in a big bowl0 -

Kimchi Jigae
1/3 lbs pork belly sliced very thin
1/2 small onion sliced
1 1/2 C loosely packed kimchi
4 cloves of garlic minced
1/2 C kimchi juice
2 C water
1/2 tsp dried ginger
1 Tbs cooking wine (such as mirin or shaoxing)
2 tsp gochujang (Korean chili paste)
2 tsp miso or dengjang
2 tsp Korean soup soy sauce (or light soy sauce)
2 Tbs gochugaru (Korean dried chili flakes) optional
8 oz silken tofu sliced into cubes
2 green onions thinly sliced
1 tbs butter
of course anything using duck, wild boar, wild mushrooms, squash, sweet potato, rabbit, turtle, veal, goose, pheasant and deer :X just a few of the ones I love most0 -

Hubby and I love the "cabbage soup diet type" soup base recipe,but I add lots of spices. I do not recommend the lunacy of actually following the insane diet it is from, but as an appetizer or a side with normal food, it is yummy!
Cabbage - Raw, 0.5 head, large (about 7" dia)
Great Value (Walmart) - Vegetable Juice Reduced Sodium,
Carrots - Raw, 6 medium
Celery - Raw, 6 stalk large (11"-12" long)
Onions - Raw, 3 medium (2-1/2" dia)
Hunt's - Crushed Tomatos (100% Natural)

oregano
basil
italian seasoning
pepper
I LOVE this soup. For variety after reheating a bowl full, I add pumpkin seeds and 2T of fat free sour cream. YUM!!!0 -
My chicken enchilada soup is famous around these parts. Best part: MADE IN CROCKPOT!
chicken (put in raw and it cooks with the soup)
2 cans mexical rotel
can diced green chiles
1 can enchilada sauce
large container low sodium chicken broth
3 tbsp lime juice (secret that makes it taste good)
minced garlic
1 chopped onion
cumin
chili powder
onion powder
garlic powder
you can add jalapenos for a kick
cook high for 4 hours or high for an hour then low for 6 and take out chicken and shred with two forks. SO great!0 -
