    Checked back in here to read about more variations. I was thinking pumpkin too; thanks for adding the pumpkin tweak to the recipe!! A new alternative for mornings when breakfast is eaten on the run. :flowerforyou: Great bunch of sharing people around here.

    I just played around with the recipe with what I had on hand. This is what I came up with and they were only 64 calories for batch of 16 cookies. They actually came out pink. The strawberry applesauce was a nice touch. Special K instead of oats worked good too!! Enjoy.

    2 mashed bananas
    1/4 cup strawberry applesauce
    2 cups crushed special k cereal
    1/4 cup skim milk
    1 tsp vanilla
    1 tsp cinnamon
    1 tbsp Splenda

    I just tried your recipe with what I had on hand... I substituted what I don't have yet in my pantry; here goes:
    3 bananas
    1/3 cup crushed apple
    1cup All Bran original cereal
    1cup whole wheat flour
    1/4 cup 1% milk
    1/2 cup unsalted cashews. chopped
    1 tsp vanilla
    1 tsp cinnamon
    1tbsp maple syrup

    Bump

    I made 23 cookies (each a little smaller than a golf ball). They sure smell good... they are not very sweet, but I like them. If I feel like indulging, I can always spread Nutella on them :wink:

    For those interested, I posted the calories in the database under "cashew breakfast cookie"

    Oh, cashews, interesting. I think I'd try pistachios when I can get my hands on some unsalted ones. Heard they have a lot of antioxidants or something. :happy:
