Do you eat the calories you burn?

I typically don't. I do have a snack every night before bed (quality time with hubby), but I usually have calories left for that. That said though, I don't work out on weekends and I tend to eat much closer to maintenance, or even over, those days so I figure some of the exercise calories I didn't eat back during the week are just "saved up" for the weekend. It all averages out in your body. This method worked for me last time and it's working now.
I'm not too worried about losing muscle tone, since I take a weight lifting class three times a week and a spin class twice a week. Both are an hour long. This is also way I don't formally exercise on the weekends, although I'm not opposed to a nice walk with my family or something. I'm also losing at a 1 - 1 1/2 pound a week rate, which is a perfectly healthy weight loss for the weight I'm at.0
