    I get up early to savour some alone time and to mindfully eat my veggies about 5 mornings a week (saute a clove of garlic, a whole onion, bell peppers, a tomato, mushrooms, with one or two eggs, feta cheese and fresh basil or dill)...other days, a couple slices of pumpernickel toasted with peanut butter. Today, I ate an avocado and had a cup of left-over curried pork and apple stew. I have found that the bigger my breakfast, the better my day goes....

    Because mornings are so time crunched, I don't eat until I get to work, so it has to be something that's easy to eat in an office setting. I also try to get some protein with breakfast. I tend to alternate between cottage cheese with fruit and a hardboiled egg with turkey sausage.

    However, I am getting tired of eating this every day and am thinking about doing an egg in a cup thing next week. Maybe with some cheese and sausage crumbles.
