    Here is another great recipe: "Zuchinni Fans"
    Cut zuchinni lengh wise into 1/4 inch widths without going through the end so one end is still connected.
    Spread the zuchinni into a fan, lightly coat with olive oil
    Sprinkle Herbs de Provence over all the zuchinni,
    insert between the leaves of the fan, tomato and slices of garlic.
    Lightly salt and pepper
    Put in oven or in a broiler until cooked.

    One zuchinni per person.
    Note: You may also use Italian seasoning instead if that is your preference.
