    not in a jar but my favourite salad combo is...

    1 Tbsp balsamic
    1-2 tsp sriracha
    roasted/grilled veggies - carrots, red onion, peppers, zucchini and brussel sprouts
    1/2 cup curried couscous (cooked with hot curry powder)
    10-15 cherry tomatoes, halved
    2-3 cups spinach

    there's something about this combo that just fills me with love :heart:

    I usually mix the dressing, roasted/grilled veg and couscous all together, fold in the tomatoes and serve over spinach with the balsamic and sriracha added on top but this could easily be "jarred" - the different textures makes it super yummy. a crunchy addition would be good as well... tried it with goat cheese once but the flavour was totally lost

    WOW!! Thanks a bunch for this recipe, it is right up my alley. full of flavor and protein from the quinoa - excellent & yum!!

    Gosh, that looks gorgeous, though I'd omit the sriracha. I've got Scandinavian taste buds!

    This week I'm eating something simple (supplemented with a bagel):
    -1 tbsp apple cider vinegar
    -1 tbsp sesame oil
    -1/4 c cooked garbanzo beans
    -one fifth of three medium carrots shredded
    -one fifth of two medium beets shredded
    -one fifth of a head of red leaf lettuce

    295 cal, 30 g carbs, 16 g fat, 9 g protein, 12 g fiber

    Makes my coworkers jealous when they see my brightly colored jar in the fridge and when I dump it out at lunch.

    Sounds delicious, although I'm scared to shred raw beets. How much of a challenge in this and does it end up looking like you murdered a small village in your kitchen? any advice?
