    I did have one recipe that called for a hollowed-out tomato. Slice the top off the tomato (and enough off the bottom so that it stands upright). Scoop out the inside and discard--the result will be a hollow tomato-bowl, into which goes one raw egg. Poke the yolk so it won't splatter all over. Microwave on high till egg is set.

    70 calories for one egg.
    About 20 calories for the tomato.
    Probably next to nothing on calories for the pepper rings.

    ^^ If your pan is too hot, you're just going to burn the bottom of the egg.

    I was hoping people would be smart enough to know what I meant by making sure the pan is hot. Don't put the egg in a cool pan, heat it up first. I make these all the time, you need the pan HOT. As soon as I crack the egg into the pan it is sizzling.

    Thanks, that looks so attractive as well as healthy! I steam fry my eggs, hot high quality non stick pan, crack egg in, add lid and turn heat down immediately until cooked.

    That's a great idea. We sometimes use Italian Bread (hollow out the center of the slice) and fry an egg in there. Toast and egg together, but not as low-cal as this idea.

    At work I make an egg sunny side up in 20-25 seconds in the microwave or scrambled egg in about 35 to 40 seconds. Just add cheese to the top of the raw egg before microwaving. I usually use a ceramic dish but this is a cool idea.
