I forgot to take a picture of my dinner last night... lol. But I did take pictures of breakfast and lunch. Also included today's lunch.
Breakfast: Oatmeal with diced fresh peaches, 2 tsp of sugar 258 cal
Lunch: Chicken breast strips, Carolina bbq sauce, shredded cheddar on a wheat tortilla, 320 cal and a pack of Tastykake Kandy Kakes 180 cal
Today's lunch: Chicken Sliders on Wheat Sandwich Thins w/ ketchup, mayo and cheddar. 355 cal and a pack of Tastykake Kandy Kakes 180 cal

This was my lunch today.
Grilled sandwich made with turkey, pepper jack cheese, and the top slice is "egg in the basket". I used olive oil Pam instead of butter and whole wheat Bread. Siracha on top.
On the side is leftover homemade turkey chili from last night's dinner topped with a little sharp cheddar.
I tried to edit it to resize so the chili is in view but it still is big. :grumble:0 -

I used a big zucchini so it's a lot
I cooked ground turkey with onions, and added red sauce, or instead of sauce I've done it using stewed tomatoes, then add noodles and cook down.
Make it hot with red pepper flakes.

One of the best oatmeals i've ever made, cherry sauce, banana marshmallow oatmeal! It would be more perfect with some maple syrup and almonds.

Mmm, looks delish. I wish I know how to make my own tortilla and pizza crust . :frown:
The 'flour tortillas' are really pretty easy.
1 tbsp melted butter
3/4 C bread flour (the original recipe also says 1/4 tsp of salt but I leave that out because I'm on a salt free diet... for taste I'd highly suggest you put it in because they are mightly bland without it)
Mash with a fork until crumbly, then add boiling hot water tiny bits at a time and keep mixing until it comes together.
knead for a few minutes until nice and smooth, cover with a damp cloth, and ignore it for 45 minutes at least (I usually do an hour). Then I split it into 3 balls and roll thin with a rolling pin.
Get a pan SUPER hot (I use a non stick pan so no reason to spray anything on it) and drop it in for a few seconds. Flip it over and leave it until you start to get brown spots on the bottom then flip ONE more time until brown spots on that side. Fold into *forths* and put into a zip lock baggie.
*FOld these right away because when they cool they will crack if you bend them. They have to be heated up for about 30 seconds in the microwave to make them soft and pliable again.
The pizza crust is the basic recipe that came with my breadmaker
It is:
1 3/8 C Water
2 Tablespoons olive oil or vegetable oil (reduced from 3 tbsp, any further than that and it was a little dry and tough)
1/4 teaspoon salt (Reduced from 3/4 tsp)
Into the bread machine bowl, then add
4 Cups all-purpose flour
2 teaspoons active dry yeast
Then hit the dough setting button.
If I have the calories I use 1 tbsp unsalted butter and 2 cloves of pressed garlic as a 'sauce' before I add the cheese/veggies.

I use alot of frozen veggies, but you can substitute for fresh (obviously).
1 Bag frozen Bird's eye Recipe Ready Chopped Zucchini - thawed and squeezed dry (patted dry with paper-towels too)
1 serving frozen chopped onion - thawed
56g shredded cheddar cheese
1 pouch of Betty Crocker Cornbread & Muffin mix
2 tbsp unsalted margarine (I use Fleishmann's)
1 egg
1/3 cup skim milk
1 tsp ground black pepper
Mix together and pour into square baking dish. Put in oven at 350 for 30-45 minutes (depends on how "done" you want it).
I cut mine in to 4 HUGE pieces. One huge hunk was 298 calories, but you could easily cut it all into 1/8 and it's be 149 calories for each piece.
This was my first time making it. Mine turned out just a tad soggy, but mostly because I didn't thaw my chopped onions, and they still had some ice on them when I threw them in there. Otherwise, all the flavor was there and they tasted great.0 -
Grilled boneless pork chop, 1/2 grilled avocado, boiled corn on the cob, grilled foil packet with heirloom tomatoes and bell peppers with olive oil.
Super easy, yummy and filling.0
