recipe: http://www.nigella.com/recipes/view/vietnamese-chicken-and-mint-salad-197 - was almost tempted to show the recipe in my cookery book, which is COVERED in food stains. Charming.0 -

I'm currently at my parents' house so meals are generally more processed, which sucks. But when I'm at uni, this is the sort of stuff I do:
Omelette if I'm lazy. I got about halfway through this one before taking the photo:
This is a prawn stir fry, with udon noodles, a sweet and sour sauce, and various veg:
Cheese and bacon stuffed chicken breast, with a side salad. Normally I would do it with mushrooms, but my dad hates them so it's just salad for now. Probably one of my favourite meals. This one has a chilli and parsley rub:
Chilli. I normally do it in bulk and then freeze in portions. Quick and easy.
Eggs Benedict on pan-fried salmon, with some cream cheese and avocado. I love it when salmon fillets are on offer.
Not actually a meal, but one of my favourite things to bake (apart from when it's in the oven and the middle doesn't cook quickly and I get freaked out but it turns out ok in the end). Lemon drizzle cake:
Things I cook but have no photos of: Fish pie, stuffed portabellos, stuffed peppers, tomato cous cous, shepherd's pie, variants of scrambled egg, tuna salad, spag bol...
Edit: messed up my BBCode, should be fixed now0 -
Today's Lunch. You cant tell but it was the best cooked burger I have had in a while!!0
-
Okay, that didn't work!0
-
Bad Boy Buddha Bowl - Rice, spinach, carrots, bean sprouts, zucchini, cucumber, corn, 'moo' radish, mushroom, fried egg on top!
House-made chips and guac:
Carne Asada, rice0 -
Homemade BLTs
Craved some french fries. So I got some potatoes, a small chicken breast, cooked them with a little oil in a good non-stick pan (mostly they were boiling in their own juice). Big bowl of lettuce and the whole meal didn't go more than 450-500 calories.
Potato salad with bacon, eggs, onion and olives. 1 g 1 calorie... so I can eat 300 g of these with no regrets.Just love my recipies.

Thought I would suck up the fear and start to share my meals again. I am recovering from anorexia and all of these meals incorporate fear foods...be prepared for another pic tonight (my 21st b-day) of my 1st cake slice EVER from a restaraunt. But for now....(pardon these being unhealthy...I am a college student...so these are my dining halls offerings)
Facing steel cut oats, pecans, and juice. Also 1st ever b-fast in dining hall
First ever egg white omelette in my whole life and I had no control cooking it. In it was chicken, spinach, mushrooms, and peppers. Also faced fear of grits and carrots!
Facing fear of mahi-mahi, roll, and corn on cobb.
Facing fear of cod I couldn't use food scale on, sweet poatoe as only 1 starch, black beans, and tomatoe.
Fear of tilapia and bell peppers
Fear of apple, bell peppers, and some PB & Co Spicy Peanut Butter (aka has cayenne pepper)
And last but not least had to eat this double chocolate vegan cupcake and not count it as anything..just extra for the day..and guess what..my weight didn't budge!0 -

spiced cous cous with chicken and lemon one pot. Doesn't look much here but it was super yummy and comes in at 444cals per 450grams. Adapted from this recipe but added peas and made it more low cal http://www.bbcgoodfood.com/recipes/10760/chicken-and-couscous-onepot
Sunday dinner of store bought salmon en croute (reduced from £4 to 55p!!), mash and brocolli. 789cal all in so not exaclty low cal but the perfect fare to eat after a long and meandering sunday afternoon walk0
